You all know how much I love Mexican food, so I am all about it anytime I can create a new recipe like my delicious Pork Burrito Bowl. This recipe features one of my new favourite cuts of meat — pork — the other white meat. I am trying to lay low on the red meat right now, so re-inventing my all-time favourite recipes using pork is my new go-to.
The reason that I am SO in love with using pork these days is that I found out that a 3 ounce serving of pork such as tenderloin, for example, is an “excellent” source of protein, thiamin, vitamin B6, phosphorus and niacin, and a “good” source of potassium, riboflavin and zinc, yet contributes only 6% of calories to a 2,000 calorie diet. Fresh pork is naturally low in sodium.
Being that I am working hard at cleaning up my diet, I knew that pork would be a better choice for me than ground beef in this pork burrito bowl recipe. The funny thing is that when my husband tasted this recipe, he said he could not tell the difference thanks to the spices I used.
This pork burrito bowl is the easiest recipe you will ever make. Less than 15 minutes and you can have dinner at the table. And the best part, you can double or triple this recipe.
