You will appreciate my healthified mini taco pizza recipe if you love taco pizza as much as I do. I tried to make the recipe as healthy as I could while still keeping the delicious taco pizza flavor I love. The flavor is only a little spicy, just the perfect amount of heat.

One mini taco pizza, which is filling, equates to just under 500 calories. For your convenience, I also include a variation to prepare this recipe using regular pizza crust, but to me, nothing beats your own little personal pizza.

Ingredients
 
 

  •  
    1 ¼ ounce taco seasoning mix - reduced sodium, divided
  • Bowl With Brown Refried Beans Paste Close Up On White Background16 ounces refried beans - fat-free
  • Ketchup8 ounce ketchup (tomato sauce Australia and UK) - no salt added
  • Raw Meat Mince1 pound ground beef (minced beef) - 93% lean
  • Pile Of Pita6 small pita bread - whole wheat
  •  
    2 cups Mexican blend cheese - reduced-fat, shredded
  •  
    29 ounces diced tomatoes - with green chilies, drained well
  • Fresh Romaine Lettuce Isolated On White1 cup Romaine lettuce - shredded

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit. Mix 1 tablespoon taco seasoning mix in a medium bowl with refried beans and tomato sauce. Set aside.
  • In a medium skillet, prepare beef according to the taco seasoning package directions using the remaining taco seasoning.
  • Place pita bread on a baking sheet. Evenly distribute and spread refried beans on pita bread. Do the same with the cheese, beef, and drained tomatoes. (If using a 12-inch pre-baked pizza crust, split the ingredients between 2 pizzas.)
  • Bake for 10 to 15 minutes or until the cheese has melted and the crust is crisp (or golden brown for pre-baked pizza crust). Cool slightly, then top each pizza with lettuce and serve immediately.
