These smoky chicken kebabs are skewered, marinated ground chicken pieces grilled until charred and cooked through to 165°F (74°C). The marinade does most of the work, and the whole thing is on the table in under 30 minutes of active time. That’s the real reason to make them on a weeknight.

Why this recipe works

Two things matter here. First, the smoked paprika in the marinade gives you genuine smoky flavor even if your grill isn’t running super hot — it’s doing real work, not just adding color. Second, cutting the chicken into uniform pieces (roughly 1.5 inches) means every piece hits 165°F (74°C) at the same time, so you’re not pulling off some pieces early and waiting on others. Those two details are what separate kebabs that cook evenly from ones that are dry on the outside and underdone in the middle.

Ingredient notes

  • Smoked paprika vs. sweet paprika: Smoked paprika is worth buying if you don’t have it — sweet paprika won’t give you the same depth. A small tin lasts months and works in dozens of recipes.
  • Chicken thighs vs. breasts: Thighs stay juicier on the grill because of their higher fat content. Breasts work but dry out faster, so pull them at exactly 165°F (74°C) and don’t let them sit on the grill.
  • Wooden skewers: Soak them at least 20 minutes in cold water. Dry skewers scorch before the chicken is done. Metal skewers skip this step entirely and are worth the small investment if you make kebabs regularly.
  • Lemon juice: Fresh is better than bottled here. Bottled lemon juice can turn the marinade slightly bitter after 30 minutes.

Common problems and fixes

  • Chicken sticks to the grill: The grate wasn’t hot enough or oiled before cooking. Preheat the grill fully, then wipe the grates with an oil-soaked paper towel using tongs right before you lay the skewers down.
  • Marinade burns before chicken is cooked through: High sugar content in the marinade (from honey or sweet sauces) causes this. If you’ve added a sweetener, move the skewers to indirect heat after the initial sear and finish cooking there.
  • Vegetables fall off the skewer: Dense vegetables like onion and pepper need to be cut thick — at least 1 inch. Thin slices spin and split. Thread them through the center, not the edge.
  • Uneven cooking across the skewer: Pieces packed too tightly trap steam and cook unevenly. Leave a small gap between each piece so heat circulates around all sides.
  • Chicken is cooked outside but still pink inside: Ground poultry must reach 165°F (74°C) throughout — use an instant-read thermometer at the thickest piece on the skewer. Color alone is not a reliable indicator of doneness with chicken.

Keeping and reheating

Cooked kebabs keep in an airtight container in the fridge for up to 3 days. Slide the chicken and vegetables off the skewers before storing — it saves space and they reheat more evenly. To reheat, a dry skillet over medium heat for 3 to 4 minutes works better than the microwave, which makes the chicken rubbery. Skip the garnish — not worth the extra dish. For freezing, raw marinated chicken (still on or off skewers) freezes well for up to 2 months; thaw overnight in the fridge before grilling. Cooked kebabs can be frozen but the vegetables go soft on reheating, so freeze the chicken pieces only if you plan to repurpose them in wraps or rice bowls.

  • Chicken Mince1 pound ground chicken
  • Isolated Yellow Bell Peppers2 medium yellow bell peppers (yellow capsicum) - cut into 1-inch pieces
  • Red Onion1 medium red onion - cut into 1-inch pieces
  • Ground Cumin1 teaspoon cumin
  • Pile Of Red Paprika Powder1 teaspoon paprika
  • Dried Garlic1 teaspoon garlic powder
  • Wooden Bowl Of Salt½ teaspoon salt
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper
  • Glass Bowl Of Olive Oil Isolated On White Background¼ cup olive oil
  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl2 tablespoons lemon juice

Instructions
 

  • Whisk together the cumin, paprika, garlic powder, salt, black pepper, olive oil, and lemon juice in a large bowl to make the marinade.
  • Add the chicken to the marinade and mix to coat. Cover and refrigerate the meat for at least 1 or 4 hours.
  • Preheat the grill to medium-high heat.
  • Form chicken into little balls or pieces, then thread it, peppers and onions onto the skewers in alternating order.
  • Grill the chicken kebabs for 10 to 12 minutes, occasionally turning, until the kebab is cooked and the vegetables are slightly charred.
