This is a one-pan ground turkey skillet served over roasted sweet potato rounds, seasoned with cayenne and cinnamon and finished with fresh cucumber and optional bacon. It comes together in 45 minutes and uses a single frying pan plus one sheet pan — that’s the whole cleanup. If you want something filling and genuinely spicy on a weeknight, this delivers.

Ingredient notes

  • 99% lean ground turkey: This is very lean, so it needs the olive oil added mid-cook to stay moist. Standard 93% lean turkey works just as well and is more forgiving if you get distracted.
  • Cayenne pepper: The recipe uses it twice — once on the sweet potatoes, once in the turkey. A full teaspoon on the potatoes is genuinely hot. Cut it to ½ teaspoon if you’re sensitive to heat.
  • Jalapeño: Adds heat and texture. Seeding it before dicing drops the heat noticeably without losing the flavor.
  • Bacon: Two rashers chopped over the top. Skip the bacon — not worth the extra pan — if you’re already happy with the heat and saltiness from the turkey spices.
  • Cucumber: Added raw at the end. English or Persian cucumbers hold up better than standard field cucumbers, which can release more water into the turkey.

Why this recipe works

Cutting the sweet potatoes into rounds instead of roasting them whole is the move that makes this practical — thin rounds roast at 450°F in 20 minutes, which lines up almost exactly with the time it takes to cook the turkey on the stovetop. The two components finish together without any waiting around. The second thing that matters is the timing of the cucumber: it goes in off the heat. Ground turkey at 165°F is hot enough to warm the cucumber through without turning it soft, so you keep a textural contrast that the rest of the dish doesn’t have.

Mistakes to avoid

  • Crowding the sweet potato rounds: If the rounds overlap on the pan, they steam instead of roast and won’t caramelize. Use a large sheet pan or split across two.
  • Not checking turkey temperature: Ground turkey must reach 165°F (74°C) internally — don’t rely on color alone. A quick check with an instant-read thermometer takes five seconds.
  • Adding tomatoes too early: Tomatoes release liquid. Add them only once the turkey has started to brown, or the pan floods and the meat stews rather than browns.
  • Skipping the flip on the sweet potatoes: The recipe says to flip at 10 minutes. Missing this means one side burns and the other stays pale and firm.
  • Over-salting: If you’re adding bacon, hold back on salt in the turkey until you taste it at the end — the bacon brings its own saltiness.

Storage and reheating

Store the turkey mixture and sweet potato rounds separately in airtight containers in the fridge for up to 3 days. The cucumber does not store well once mixed in — keep any leftover cucumber separate and add it fresh when you plate. To reheat, warm the sweet potato rounds in a 400°F oven or a dry skillet for 5 minutes to bring back some texture; the turkey reheats well in a skillet over medium heat with a splash of water to prevent sticking, about 3–4 minutes. Both components freeze reasonably well for up to 2 months, but the cucumber and tomatoes should not be frozen.

  • Turkey Mince1 pound ground turkey (minced turkey) - 99% lean
  • Cherry Tomatoes On Vine, Paths1 cup cherry tomatoes - halved
  • Jalapeno Hot Pepper1 medium jalapeño - diced
  • Cucumber With Slices1 medium cucumber - diced
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Heap Of Cayenne Pepper1 pinch cayenne pepper - pepper, salt

Sweet Potato Ingredients

  • Sweet Potato4 medium sweet potato - cut into rounds

Instructions
 

  • Preheat oven to 450 degrees Fahrenheit. Heat a little bit of the olive oil in a large frying pan on medium heat. Once heated, add the raw turkey and let cook.
  • While the turkey was cooking, coat a pan with olive oil and add the sweet potato rounds. Let them sit in the oil and then flip them to coat both sides.
  • Sprinkle the cayenne, cinnamon, and salt and pepper on both sides of the rounds and throw them in the oven for 20 minutes, flipping them after 10.
  • Back to the turkey, once the water in the pan starts to evaporate, add the rest of the oil and spices and stir, breaking up the large chunks as you go.
  • After the turkey begins to brown, add the tomatoes and jalapenos and let cook for about 5 to 8 more minutes so everything browns nicely. Throw in the cucumbers at the end, so they don’t cook. I don’t like them cooked, but I don’t mind them warm.
  • When the sweet potatoes are done, line them on a plate to throw the turkey on top. I added the cucumbers to the turkey right before I plated it. You can throw some chopped bacon on top.

Can I use ground chicken instead of ground turkey?

Yes. Ground chicken has a similar fat content and cooks the same way. It also needs to reach 165°F (74°C) internally, so the cooking time stays roughly the same.

How do I know when the ground turkey is fully cooked?

Use an instant-read thermometer and check that the thickest part of the meat reads 165°F (74°C). Ground turkey can look cooked through before it hits that temperature, especially with 99% lean meat.

Can I prep the sweet potatoes ahead of time?

Is there a way to make this less spicy without changing the recipe much?

Reduce the cayenne on the sweet potatoes to ¼ teaspoon and skip the jalapeño seeds. The cherry tomatoes and cinnamon still give the dish plenty of flavor at a lower heat level.

Can I make this with regular potatoes instead of sweet potatoes?

Regular potatoes work but need longer at 450°F — closer to 30–35 minutes for rounds of the same thickness. You’ll also lose the natural sweetness that balances the cayenne, so the dish will taste sharper overall.
