This is a carbonara-style skillet made with ground turkey, turkey bacon, and zucchini noodles instead of pasta. The egg-and-Parmesan sauce works the same way as the classic — no cream needed. It comes together in one pan in under 30 minutes, and the portions reheat well, making it a genuinely useful recipe to have in rotation.

The technique that matters

The only real skill in this recipe is handling the egg mixture. Pull the pan off the heat before you add the eggs and cheese — residual warmth is enough to thicken the sauce without scrambling it. If the pan is still on a hot burner, the eggs seize up fast and you get clumps instead of a coating. The second thing worth getting right is browning the turkey properly before anything else goes in. Press it flat, leave it alone for a minute or two, then break it up. That contact with the hot pan builds flavor that stirring constantly will prevent. Ground turkey reaches a safe internal temperature of 165°F (74°C), so use a thermometer if you’re unsure — it should never be served pink.

Shopping notes

  • Zucchini noodles: Pre-spiralized bags from the produce section save time and work fine here. If you spiralize your own, pat the strands dry with a paper towel first — excess surface moisture slows browning and waters down the sauce.
  • Turkey bacon: Thickness varies a lot by brand. Thicker-cut turkey bacon crisps better and holds up in the pan. Thin strips tend to steam rather than brown.
  • Parmesan: Buy a block and grate it yourself. Pre-grated Parmesan contains anti-caking agents that make the sauce grainy rather than smooth.
  • Ground turkey: 93% lean works better than 99% fat-free here — a little fat helps the turkey brown and keeps the finished dish from tasting dry.

Storage and reheating

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat with a splash of water — about a tablespoon — to loosen the sauce, stirring gently until warmed through. Microwave reheating works but tends to tighten the egg sauce; if you go that route, use 50% power in 45-second intervals and stir between each. Skip the garnish — not worth the extra dish when you’re pulling this from the fridge on a weeknight. Freezing is not recommended: zucchini noodles release a lot of water when thawed and the egg-based sauce breaks. If you want to prep ahead, cook and portion the turkey and turkey bacon, refrigerate separately, and finish the zoodles and sauce fresh — it only adds about 10 minutes.

What can go wrong

  • Watery sauce pooling at the bottom: Zucchini releases moisture as it sits. Don’t let the finished dish rest in the pan — serve it immediately, or drain off any liquid before storing.
  • Turkey clumping into large chunks: Ground turkey sticks together more than beef. Break it up with a wooden spoon early in cooking, before it fully sets, or you’ll be fighting dense lumps in the finished dish.
  • Sauce that tastes flat: The egg-cheese mixture needs enough salt and plenty of black pepper to come alive. Taste before serving and adjust — under-seasoned carbonara-style sauce is the most common reason this dish disappoints.
  • Turkey bacon going rubbery instead of crispy: Overcrowding the pan traps steam. Cook turkey bacon in a single layer with space between strips, and don’t move it too much.
  • Egg mixture added too soon after removing from heat: If the pan is still very hot, the eggs will still scramble. Let it sit off the heat for 20 to 30 seconds before pouring in the egg mixture, especially if you’re using a cast iron or heavy pan that retains heat.

Ingredients
 
 

  • Turkey Mince2 pounds ground turkey (minced turkey) - breast
  • Top View Of Fresh Zucchini2 large zucchini - spiralized
  • Champignon Mushroom1 small box mushrooms - sliced
  • White Onion1 large white onion - chopped
  •  
    5 strips sliced turkey bacon - chopped
  • Pasta Sauce Or Marinara Sauce1 jar pasta sauce

Instructions
 

  • In a large skillet or kettle, cook ground turkey breast until cooked through (approx 12-15 minutes).
  • Remove cooked turkey breast from the pan and set aside.
  • Add bacon, onion, and mushrooms to the skillet. Cook until bacon begins to brown (approximately 10 minutes).
  • Add cooked turkey back into the skillet.
  • Add raw spiralized zucchini to the skillet, and toss for 5 minutes.
  • Serve with your favorite pasta sauce.
