Preheat oven to 450 degrees Fahrenheit. Heat a little bit of the olive oil in a large frying pan on medium heat. Once heated, add the raw turkey and let cook.
While the turkey was cooking, coat a pan with olive oil and add the sweet potato rounds. Let them sit in the oil and then flip them to coat both sides.
Sprinkle the cayenne, cinnamon, and salt and pepper on both sides of the rounds and throw them in the oven for 20 minutes, flipping them after 10.
Back to the turkey, once the water in the pan starts to evaporate, add the rest of the oil and spices and stir, breaking up the large chunks as you go.
After the turkey begins to brown, add the tomatoes and jalapenos and let cook for about 5 to 8 more minutes so everything browns nicely. Throw in the cucumbers at the end, so they don’t cook. I don’t like them cooked, but I don’t mind them warm.
When the sweet potatoes are done, line them on a plate to throw the turkey on top. I added the cucumbers to the turkey right before I plated it. You can throw some chopped bacon on top.
