It’s been a while since I shared a ground beef recipe, so I thought I would share another one of my favorites American dishes, the Juicy BBQ Meatloaf Minis! One of the hallmarks of dieting is restricting certain foods or food groups. Instead of what I can’t have, I like to focus on adding things that will help me feel good and give me more nutrients.
Juicy BBQ Meatloaf Minis
It’s been a while since I shared a ground beef recipe, so here's one of my favorites American dishes, the Juicy BBQ Meatloaf Minis!
Ingredients
- 1 ½ pounds ground beef (minced beef)
- 1 medium white onion - sweet onion, sliced thinly
- 1 tablespoon butter - or olive oil
- 1 medium egg - slightly beaten
- 1.5 tablespoon Worcestershire sauce
- 3 tablespoons BBQ sauce (barbecue sauce) - or any of your favorite BBQ sauce, plus more for drizzling
- ½ cup breadcrumbs
- 4 ounces cheddar cheese - cubed
- 1 teaspoon salt - to taste
- 1 teaspoon ground black pepper - to taste
Instructions
- Preheat oven to 350°F.
- Add 1 tablespoon of butter or olive oil to a pan on low heat. Add the sliced sweet onion and salt to taste. Caramelize onions for 20-30 minutes or until you reach the desired color. Once done, set aside and let cool.
- Mix together all of the ingredients, including the slightly cooled onions, in a bowl.
- Shape into 6 mini logs and place on prepared baking sheet. I usually foil and lightly spray with non-stick spray.
- Drizzle BBQ sauce on top of the logs if desired (you do desire). I usually spread with the back of a spoon.
- Bake for 20-30 minutes or to desired doneness. Enjoy!
