These are individual ground beef loaves — six of them from 1½ pounds of meat — baked with caramelized onions, Worcestershire, and a BBQ sauce glaze, with cubes of cheddar tucked inside. They cook in under 30 minutes once the onions are done, which makes them genuinely faster than a full-size loaf. If you have ground beef and a bottle of BBQ sauce in the house, you’re most of the way there.

Why this recipe works

Two things drive the result here. First, caramelizing the onions low and slow — 20 to 30 minutes — drives off their water and concentrates their sugars, so the finished minis are moist and savory rather than steamy and bland. Skipping this step or rushing it on high heat gives you undercooked, sharp-tasting onion pieces in the meat. Second, the mini format matters: six small loaves have far more exposed surface than one big loaf, so the BBQ glaze on top actually caramelizes against the oven heat instead of just sitting there wet. That sticky, slightly charred edge is what makes these worth making over a standard meatloaf.

Troubleshooting

  • Minis falling apart when you lift them off the pan: The mixture needs the egg and breadcrumbs to bind properly — if you scaled the recipe up or down, make sure those scaled too. Let the minis rest on the pan for 5 minutes after pulling from the oven before moving them; they firm up as they cool slightly.
  • Cheese leaking out completely during baking: Push the cheddar cubes toward the center of each loaf and pinch the meat firmly around them. If the cubes are too close to the surface or an end, they’ll melt straight out onto the pan.
  • Dry, dense texture: Overmixing is usually the cause. Combine everything until just incorporated — the same rule as meatballs. Also check that your ground beef isn’t extra-lean (90%+ lean); some fat in the mix keeps things moist.
  • BBQ glaze burning before the meat is done: This can happen if your BBQ sauce is very high in sugar. Tent loosely with foil for the first 15 minutes, then uncover for the last 10 to finish the glaze without scorching.
  • Undercooked center: Mini loaves vary in thickness depending on how you shape them. Use an instant-read thermometer — ground beef needs to reach 160°F (71°C) at the thickest point. Don’t rely on color alone.

About the ingredients

  • BBQ sauce: Any bottle in the pantry works. Smoky or hickory styles give a deeper flavor; sweet Kansas City-style sauces will caramelize faster, so watch the glaze.
  • Breadcrumbs: Plain dried breadcrumbs are standard, but crushed crackers, panko, or even rolled oats work as a straight swap at the same volume.
  • Cheddar cheese: Skip the fancy block — pre-cubed deli cheddar or even string cheese torn into chunks does the job. Pepper jack adds heat; gouda melts a little more smoothly. Skip the garnish — not worth the extra dish.
  • Ground beef: An 80/20 blend is ideal. Ground turkey or chicken can substitute, but cook to 165°F (74°C) and expect a slightly firmer texture.
  • Worcestershire sauce: If you’re out, soy sauce works in a pinch — use about half the amount since it’s saltier, and reduce the added salt accordingly.

Storage and reheating

Cooled minis keep in an airtight container in the fridge for up to 4 days. For freezing, wrap each one individually in plastic wrap, then place in a zip bag — they’ll hold well for up to 3 months. Reheat from the fridge in a 325°F oven for 10 to 12 minutes, or microwave on medium power in 60-second bursts to avoid drying out the edges before the center is hot. From frozen, thaw overnight in the fridge first, then reheat the same way. A small spoonful of extra BBQ sauce on top before reheating helps restore the glaze.

Ingredients
 
 

  • Raw Meat Mince1 ½ pounds ground beef (minced beef)
  • White Onion1 medium white onion - sweet onion, sliced thinly
  • Fresh Butter Pieces1 tablespoon butter - or olive oil
  • Chicken Egg1 medium egg - slightly beaten
  • Worcestershire Sauce1.5 tablespoon Worcestershire sauce
  • Bottle Of Sauce3 tablespoons BBQ sauce (barbecue sauce) - or any of your favorite BBQ sauce, plus more for drizzling
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl½ cup breadcrumbs
  • Cheddar Cheese Block, Paths4 ounces cheddar cheese - cubed
  • Wooden Bowl Of Salt1 teaspoon salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper - to taste

Instructions
 

  • Preheat oven to 350°F.
  • Add 1 tablespoon of butter or olive oil to a pan on low heat. Add the sliced sweet onion and salt to taste. Caramelize onions for 20-30 minutes or until you reach the desired color. Once done, set aside and let cool.
  • Mix together all of the ingredients, including the slightly cooled onions, in a bowl.
  • Shape into 6 mini logs and place on prepared baking sheet. I usually foil and lightly spray with non-stick spray.
  • Drizzle BBQ sauce on top of the logs if desired (you do desire). I usually spread with the back of a spoon.
  • Bake for 20-30 minutes or to desired doneness. Enjoy!

Can I make these ahead and refrigerate before baking?

Yes — shape the minis, cover the pan tightly, and refrigerate for up to 24 hours before baking. Add the BBQ glaze right before they go into the oven, not ahead of time, or it soaks in and loses its surface effect.

What can I use instead of a baking sheet if I don’t want the mess?

A muffin tin works if you press the mixture into large cups — it contains any drips and makes cleanup easier. The shape will be rounder than a log, but the cook time stays roughly the same; still check for 160°F internally.
