This is a baked ground turkey and sweet potato casserole — seasoned turkey cooked with vegetables, layered with mashed sweet potato, and finished with melted cheese. It comes together in about an hour with ingredients most kitchens already have, and it reheats well enough that leftovers are genuinely worth making extra for.

What makes this version work

Two things matter most here. First, cook the turkey filling until any liquid has mostly evaporated before you layer it — wet filling makes the sweet potato layer slide and the bottom turn soggy. Second, mash the sweet potatoes while they’re still hot and spread them in an even layer; if they cool and stiffen before you spread them, you’ll tear up the filling underneath trying to push them flat. Get both of those right and the casserole holds together when you scoop it, which makes it actually usable for packed lunches.

Troubleshooting

  • Cheese browns too fast before the center is hot: Tent the dish loosely with foil for the first two-thirds of baking, then remove it to let the cheese color. This is especially relevant if your oven runs hot.
  • Turkey filling tastes flat: Ground turkey is lean and needs more salt than you think, plus acid. A small splash of Worcestershire sauce or even a teaspoon of apple cider vinegar stirred into the filling before baking sharpens the flavor without changing the dish.
  • Sweet potato layer is gluey: Over-mashing releases too much starch. Mash just until smooth — a few small lumps are fine and actually help the texture once baked.
  • Casserole is watery after baking: This usually means the turkey wasn’t drained well enough, or the sweet potatoes had too much added liquid. Use a spoon to press the turkey against the pan and tip off excess fat before layering, and hold back on any milk or butter in the mash until you see how wet the potatoes already are.
  • Turkey reads under 165°F at the center: Cover with foil and return to the oven in 5-minute increments. Always check the thickest part of the filling, not the top layer — ground poultry must reach 165°F (74°C) throughout before serving.

Ingredient notes

  • Ground turkey: 93% lean works best here — 99% lean can dry out and turn grainy. If you only have extra-lean, add a tablespoon of olive oil to the pan when browning.
  • Sweet potatoes: Regular orange-fleshed sweet potatoes are the default. White sweet potatoes or even butternut squash (boiled and mashed) work fine — skip the garnish with squash since the color is less distinct anyway, not worth the extra dish.
  • Cheese topping: Sharp cheddar is the obvious choice, but Monterey Jack melts more smoothly, and a 50/50 mix of whatever shredded cheese you have open is perfectly fine. Pre-shredded bags have anti-caking starch that slightly dulls the melt, but it won’t ruin the dish.
  • Vegetables in the filling: Onion and garlic are the base. Frozen corn or frozen peas can go in straight from the bag — no need to thaw first.

Storage and reheating

Refrigerate leftovers in a covered container for up to 4 days. The flavors settle and the casserole actually slices more cleanly on day two. To reheat, cover with foil and warm in a 350°F (175°C) oven for 15–20 minutes, or microwave individual portions on medium power for 2–3 minutes, stirring once halfway through to avoid hot spots in the turkey layer. For freezing, portion into individual servings before freezing — the whole dish can be frozen for up to 2 months, but thaw overnight in the fridge before reheating rather than going straight from frozen to oven, which tends to make the sweet potato layer weep.

Ingredients
 
 

  • Turkey Mince2 pounds ground turkey (minced turkey) - breast
  • Garlic2 teaspoons garlic - chopped
  • Isolated Yellow Bell Peppers2 medium yellow bell peppers (yellow capsicum) - chopped
  • White Onion1 medium white onion - chopped
  • Sweet Potato2 medium sweet potato - spiralized or chopped
  • Red Hot Chili Pepper Powder And Half Isolated On White Background2 teaspoons chili powder (chilli powder in British English)
  • Chicken Egg4 medium egg
  • Mozzarella Cheese Isolated On White Background1 cup mozzarella cheese - low-fat and shredded
  • Glass Bowl Of Olive Oil Isolated On White Background4 tablespoons olive oil - extra-virgin
  • Wooden Bowl Of Salt1 dash salt
  • Ground Black Pepper Pile, Paths, Top1 dash ground black pepper

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • Heat 2 tablespoons of olive oil over medium heat in a large skillet. Add in ground turkey and garlic. Cook until turkey is cooked through.
  • Add onions, peppers and chili powder to the skillet. Cook for 10 minutes. Then set aside.
  • Add olive oil and raw sweet potato to a separate skillet and cook on medium heat. Toss potato in skillet until softened.
  • Once the sweet potato is soft, add it to a 9x12 bake-safe dish. Spread it along the bottom of the plate, making a bottom layer for the casserole.
  • Next, add the ground turkey mixture to a 9x12 dish over top of the sweet potato.
  • In a small bowl, beat 4 eggs slightly, then pour eggs over the casserole.
  • Sprinkle the cheese over the top.
  • Bake casserole for 15 minutes. The cheese should be starting to brown.
