The peppers hold up under the toppings without going soggy, and the whole tray comes together fast enough for a weeknight. It feeds a crowd without leaving anyone hunting for the cheesiest chip — every pepper half gets the same load of filling.

Before you start

The one thing that makes or breaks this dish is getting the turkey fully cooked before it goes into the peppers. Ground turkey must reach an internal temperature of 165°F (74°C) — pull it off the heat only when it’s cooked through with no pink remaining, then stir in the salsa so the moisture distributes evenly through the meat. The second thing worth doing is patting the pepper halves dry after seeding them. Any water sitting inside the pepper cups will steam during baking and make the filling watery rather than juicy, so a quick press with a paper towel takes ten seconds and genuinely improves the result.

If something goes sideways

  • Filling is sliding out of the peppers: Mini sweet peppers vary in size and some are too round to sit flat. Trim a very thin slice off the curved underside of each half so it rests stable on the baking sheet without rocking.
  • Cheese is browning before the peppers are done: Your oven runs hot or the rack is too high. Move the tray to the middle rack and loosely tent with foil for the last few minutes.
  • Meat filling tastes flat: Salsa adds moisture but not always enough salt. Taste the cooked turkey mixture before filling the peppers and adjust seasoning — a pinch of salt at this stage fixes it completely.
  • Peppers are too soft and collapsing: They were baked too long or sliced too thin. Pull the tray out as soon as the cheese is melted and starting to bubble; the peppers should still have some structure.
  • Too much liquid pooling on the baking sheet: The salsa you used was very thin. Drain it briefly through a sieve before adding it to the turkey, or use a chunkier salsa or Rotel next time.

Smart swaps

  • Ground turkey: Ground chicken works the same way and also needs to hit 165°F (74°C). Ground beef or pork (cook to 160°F / 71°C) both work well if that’s what you have — the filling will be richer.
  • Taco seasoning: Any store brand works. If you’re mixing your own, combine chili powder, cumin, garlic powder, smoked paprika, oregano, salt, and a pinch of cayenne.
  • Salsa: Rotel (drained) gives a slightly spicier, more Southwestern result. Skip the sour cream garnish after baking — it adds a dish to wash and the filling is already moist enough without it.
  • Cheese: Pre-shredded blends melt faster than block cheese you shred yourself, which is useful here since the bake time is short.

Keeping and reheating

Leftover filled peppers keep in an airtight container in the fridge for up to 3 days. Reheat them in a 375°F (190°C) oven for 8–10 minutes rather than the microwave — the microwave turns the peppers limp and makes the cheese rubbery. If you want to get ahead, cook and season the turkey filling up to 2 days in advance and refrigerate it separately; fill and bake the peppers fresh when you’re ready. The assembled unbaked peppers can be frozen for up to 1 month; bake from frozen at 375°F (190°C) for about 20–25 minutes, checking that the meat is heated through to 165°F (74°C) before serving.

Ingredients
 
 

  • Turkey Mince1 ½ pounds ground turkey (minced turkey)
  • Ripe Yellow Onion On A White Background½ medium yellow onion - finely diced
  • Taco Seasoning1 teaspoon taco seasoning
  • Salsa Sauce1 tub salsa - no sugar added if you can find it
  • Fresh Green Pepper Isolated On White Background12 mini green pepper (green capsicum)
  • Wooden Bowl Of Salt1 dash salt
  • Ground Black Pepper Pile, Paths, Top1 dash ground black pepper
  • Mozzarella Cheese Isolated On White Background½ cup mozzarella cheese

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • Cut the top off of the peppers. Then cut the peppers in half, top to bottom and remove the seeds and ribs. Line them in a 13×9 inch glass pan.
  • Heat a large pan at medium-high heat with some coconut oil (or olive oil). Add your onions and saute until soft, about 4 minutes.
  • Add in ground turkey and cook until it is cooked through. Apply taco seasoning according to the directions.
  • Stir salsa into the ground turkey mixture.
  • Using a spoon, fill each sweet pepper with about 1 to 2 tablespoons of the meat mixture (depending on the size of your peppers).
  • Top with cheese and cover the dish with foil and bake for 20 to 25 minutes.
  • Remove the foil and bake the sweet pepper for another 5 minutes.
  • Serve immediately.
