These Greek-style meatballs combine ground beef and lamb with cumin, garlic, onion, and tomato paste, then bake on skewers until cooked through. You get a high-protein main that comes together without much fuss — no frying, no standing over a splattered pan. They work equally well for a weeknight dinner or batch cooking for the week ahead.

The technique that matters

The single most important step is keeping the meat mixture cold and not overworking it. Warm fat from your hands starts to break down the texture, and over-mixing compacts the proteins so the finished meatballs turn dense and rubbery. Mix just until the egg, breadcrumbs, and seasonings are evenly distributed — stop the moment you don’t see dry pockets. The second thing worth getting right is the skewer shape: pressing the mixture firmly and evenly around the skewer in a compact log prevents the meat from sliding or cracking open during baking. Any gaps trap steam and cause uneven cooking. Aim for uniform thickness along the whole skewer so every part hits 160°F (71°C) at the same time.

Smart swaps

  • Ground lamb only: If you can’t find a beef-lamb blend or prefer to keep it simple, all lamb works fine — the flavor is stronger but still very much at home with cumin and garlic.
  • Breadcrumbs: Whole wheat or gluten-free breadcrumbs are a straight swap at the same quantity. Panko makes the mixture slightly looser, so reduce by about a tablespoon.
  • Tomato paste: Don’t skip it — it adds moisture and binds the mix. If you’re out, a tablespoon of grated fresh tomato pressed dry is a workable substitute.
  • Skewers: Metal skewers are easier here than wooden ones because the meat grips them better and they conduct heat toward the center. Skip the garnish — not worth the extra dish.

Leftovers and meal prep

Cooked meatballs keep well in an airtight container in the fridge for up to 4 days. For freezing, let them cool completely, then freeze on a tray before transferring to a bag — this stops them sticking together. They’ll hold quality in the freezer for up to 3 months. Reheat from frozen in a 350°F (175°C) oven for about 15 minutes, or thaw overnight in the fridge and reheat in a covered skillet over medium-low heat with a splash of water to keep them from drying out. They pair well with a simple cucumber-tomato salad, cooked lentils, or warmed pita to round out the meal without much extra effort.

If something goes sideways

  • Mixture won’t hold on the skewer: The mix is probably too wet. Add breadcrumbs one tablespoon at a time, chill the mixture for 15 minutes, then try again — cold fat grips much better.
  • Meatballs dry out in the oven: They were likely overcooked or the oven runs hot. Use a meat thermometer and pull them at exactly 160°F (71°C). A wire rack also helps air circulate so the outside doesn’t steam and tighten.
  • Falling apart when you turn them: They need more time on the first side — a crust needs to form before they’ll release cleanly. Give them another 2 minutes before attempting to rotate.
  • Bland flavor after baking: Taste the raw mixture before shaping (a small pinch fried in a pan works). If it needs more salt or cumin, fix it now — you can’t season the inside after baking.
  • Uneven cooking, raw in the center: The logs were probably too thick or packed unevenly. Aim for no more than 1 inch in diameter and press the meat evenly from end to end before baking.

  • Raw Meat Mince500 grams ground beef (minced beef)
  • Tasty Minced Meat Isolated On White Background500 grams ground lamb (minced lamb)
  • Ripe Yellow Onion On A White Background1 large onion - finely chopped
  • Garlic3 cloves garlic - chopped finely
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl1 cup breadcrumbs
  • Chicken Egg2 medium eggs
  • Ground Cumin1 teaspoon cumin
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Spoon With Tomato Paste Isolated On White Background½ cup tomato paste

Instructions
 

  • Preheat the oven to 190 degrees Celcius or 350 degrees Fahrenheit.
  • Add all the meat patty ingredients to a bowl and mix by hand until well combined.
  • Divide the mince into 12 150-gram meatballs.
  • Roll each meatball into a sausage shape and push a skewer through the centre.
  • Place the skewer souvlaki on a baking tray lined with baking paper.
  • Cook in the oven for 30 minutes or until cooked through.
