Skewered meatballs made from a half-and-half blend of ground beef and ground pork, seasoned with Italian herbs and bound with cooking cream, then pan-seared and threaded onto bamboo sticks. They work as a party appetizer, but three skewers alongside a simple salad or roasted vegetables is a complete, protein-forward dinner with almost no effort. The format just makes them easier to serve and eat than a bowl of pasta.

Substitutions that actually work

  • Cooking cream: Heavy cream or half-and-half both work. Whole milk is a fine substitute but produces a slightly firmer texture.
  • Ground pork: Ground turkey can replace the pork — just note it has less fat, so the meatballs will be a little denser. Cook ground turkey to 165°F (74°C) internal temperature; do not serve it pink.
  • Breadcrumbs: Panko works and gives a slightly lighter texture. Crushed crackers or rolled oats in a pinch will hold the mix together adequately.
  • Herb blend: If you don’t have all six herbs on hand, a good Italian seasoning blend covers the same ground. One teaspoon of a pre-mixed blend replaces the individual dried herbs.
  • Bamboo skewers: Metal cocktail picks or reusable short skewers work just as well. Skip soaking bamboo skewers if you’re pan-frying rather than grilling — it’s unnecessary here.

Why this recipe works

Two things actually drive the result. First, the beef-pork split: beef provides the savory depth and structure, while pork’s higher fat content keeps the interior moist through the sear and any finishing heat. A lean-only mix dries out fast. Second, the 30-minute refrigerator rest after forming is not optional — chilling firms the fat in the mixture so the meatballs hold a round shape in the pan instead of flattening or crumbling on contact with the oil. Both steps are simple, but skipping either one shows up immediately on the plate.

What can go wrong

  • Meatballs stick to the pan: The pan and oil need to be properly hot before the meatballs go in. If you add them to a cold or barely warm pan, they bond to the surface. Wait until the oil shimmers.
  • Uneven browning: Rolling the meatballs to a consistent size matters more than it seems. Smaller ones brown and finish faster; mixed sizes mean some are overdone before others are ready. Use a small cookie scoop or tablespoon measure for uniformity.
  • Herbs taste raw or dusty: Dried herbs need fat and heat to bloom. If the mixture smells flat after mixing, let it sit in the fridge during the rest period — the herbs hydrate and the flavor develops without any extra work.
  • Skewers split the meatball when threading: The meatballs need to be fully cooked and rested off the heat for a couple of minutes before skewering. Threading hot, just-cooked meatballs tears them apart. Let them firm up first.
  • Undercooked centers: Ground pork and beef must reach 160°F (71°C) internal temperature. If you’re finishing a large batch in the oven, use a meat thermometer rather than relying on timing alone — oven temperatures vary and meatball size affects the result.

Leftovers and meal prep

Cooked meatballs keep in an airtight container in the fridge for up to 4 days. For a quick meal, pull them off the skewers and reheat in a covered skillet with a splash of water over medium-low heat — this keeps them from drying out, which an open microwave tends to do. They also freeze well: lay them on a baking sheet to freeze individually, then transfer to a freezer bag for up to 3 months. Thaw overnight in the fridge before reheating. Skip the garnish of fresh herb leaves on the serving board — not worth the extra prep when the meatballs themselves are the draw. For meal prep, you can form and refrigerate the raw meatballs up to 24 hours ahead, which actually improves texture since the rest time extends.

Ingredients
 
 

  • Pork Mince½ kilogram ground pork (minced pork)
  • Raw Meat Mince½ kilogram ground beef (minced beef)
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl1 cup breadcrumbs
  • Chicken Egg2 medium eggs
  • Cooking Cream¼ cup cooking cream - cooking
  • Dried Oregano, Herb Circle From Above, Over White2 teaspoons mixed herbs (usually Thyme, Marjoram, Oregano, Parsley, Sage, Basil) - Italian
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil - or any frying oil of your choice

Instructions
 

  • In a large mixing bowl, combine your pork and beef mince and mix with your hands till well combined. Add your breadcrumbs, eggs, cooking cream, and some herbs. I like to use mixed Italian herbs, but you can use any herbs of your choice. Add salt and pepper to taste.
  • Roll 2 teaspoons of the mixture into a ball. Transfer to a plate. Repeat with the remaining mixture. Leave rolled meatballs to rest in the fridge for at least 30 minutes before cooking.
  • Heat 2 tablespoons of olive oil over medium-high heat in a heavy-based frying pan. Add some meatballs. Cook the meatballs for 4 minutes or until just browned. Do not put too many meatballs in the frying pan; otherwise, they will soak up too much oil and not cook as quickly. Repeat this step until all your meatballs are cooked.
  • Skewer the meatballs into the bamboo sticks.
