These are baked turkey meatballs seasoned with oregano, cumin, dill, thyme, cinnamon, and nutmeg, with crumbled feta and fresh parsley and mint mixed right into the meat. The honest reason to make them: 30 minutes start to finish, one bowl, one pan, and the spice list sounds long but it’s all dry pantry staples you likely already have.

Why this recipe works

Two things actually matter here. First, the feta does double duty — it seasons the mix from the inside and adds enough fat and moisture to keep 93% lean turkey from drying out in a hot oven. Second, coconut flour absorbs liquid differently than breadcrumbs: it soaks up the egg and any moisture released by the turkey, which tightens the mixture just enough to hold a ball without making the texture dense. The result is a meatball that stays together on the pan and stays tender when you bite into it.

If something goes sideways

  • Mix is too wet to roll: Coconut flour varies by brand and humidity. Add another half teaspoon at a time, up to an extra full tablespoon, and let the mix sit for two minutes — it keeps absorbing. Don’t swap in regular flour at a 1:1 ratio; it won’t behave the same way.
  • Meatballs flatten on the pan: The mix was probably overworked or too warm. Chill the shaped meatballs in the fridge for 10 minutes before baking. Cold fat holds its shape better in the first minutes of heat.
  • No fresh herbs on hand: Dried parsley and dried mint work fine. Use one teaspoon dried for every tablespoon fresh called for. Skip the garnish — not worth the extra dish.
  • No feta in the house: A firm goat cheese crumbled in is the closest substitute. Ricotta is too wet and will throw off the texture. If you have neither, add an extra pinch of salt and a teaspoon of olive oil to compensate for the missing fat and seasoning.
  • Meatballs read under 165°F at 13 minutes: Oven calibration varies. Give them another 2–3 minutes and check again. Do not pull them early — ground turkey must reach 165°F (74°C) all the way through.

Storage and reheating

Cooked meatballs keep in a sealed container in the fridge for up to 4 days. For freezing, spread them on a sheet pan until solid, then transfer to a freezer bag — they’ll keep for 3 months without sticking together. Reheat from frozen in a 350°F oven for 12–15 minutes, or from fridge-cold in a covered skillet with a splash of water over medium-low heat for about 5 minutes. The microwave works too but tends to toughen the outside; if that’s your only option, use 50% power in 30-second bursts.

  • Turkey Mince1 pound ground turkey (minced turkey) - 93% lean
  • Feta Cheese Cubes On White2 ounces feta cheese - full-fat
  • Chicken Egg1 large egg - whisked
  • Parsley On White Background3 tablespoons parsley - fresh, minced
  • Bowl Of Coconut Flour2 tablespoons coconut flour
  • Fresh Mint Leaves1 tablespoon mint - fresh, minced
  • Dried Garlic½ teaspoon garlic powder
  •  
    ½ teaspoon ground basil
  •  
    ½ teaspoon ground oregano
  • Ground Cumin¾ teaspoon cumin
  •  
    ¾ teaspoon ground dill
  •  
    ¾ teaspoon ground thyme
  • Wooden Bowl Of Salt½ teaspoon salt
  • Heap Of Ground Nutmeg And Whole Nutmeg Seeds¼ teaspoon ground nutmeg

Instructions
 

  • Preheat your oven to 400°F and line the rimmed baking sheet with parchment paper.
  • Combine all of the ingredients in a big bowl and mix properly. Use a cookie scoop or spoon about 1 tablespoon-sized, and put onto the pan, rolling them into a ball. This recipe can make about 20 meatballs.
  • Bake for about 10-13 minutes or until the thermometer inserted in the middle of the meatballs reads 165°F.

Common questions

Can I use ground chicken instead of ground turkey?

Yes, ground chicken works as a direct swap. Stick with 93% lean if you can find it — extra-lean ground chicken has even less fat than turkey and will dry out faster, so watch the oven time and pull them as soon as they hit 165°F (74°C).

Can I substitute regular breadcrumbs for the coconut flour?

You can use plain breadcrumbs, but the ratio is different — use 3 tablespoons of breadcrumbs in place of the 2 tablespoons of coconut flour, since coconut flour absorbs much more liquid. The meatballs will no longer be gluten-free or low-carb, but the texture will still be good.

Do I have to use all those spices, or can I simplify?

The core flavor comes from oregano, cumin, and garlic powder — if you’re missing a couple of the others, the meatballs will still taste distinctly seasoned. The cinnamon and nutmeg are small amounts but they add a background warmth that makes these taste different from a generic herb meatball, so keep those if you have them.
