Indian Style Fried Rice is one of my favourite lunches to have at work. If I make it in the morning before I go to work, my daughter will even have it for breakfast, which is an excellent idea. You could even put a poached egg on the top.
It is not an exact recipe – you can put whatever you like in it. I like it as fried rice with the beef, but you could add cooked chicken or sausage or chorizo if you want, or chopped boiled eggs or sliced omelette. I just use frozen vegetables because I’m usually in a hurry, and it still tastes really good, but you could, of course, use fresh vegetables. It’s an essential everyday recipe, but you could definitely improve it with different meats and vegetables (keep the cashews, though, it definitely needs some crunch).
Flavourful Indian Style Fried Rice Recipe
Ingredients
- 2 tablespoons olive oil
- 3 teaspoons ground cumin
- 3 teaspoons ground coriander
- 1 ½ teaspoon garam masala
- ¼ teaspoon chili powder (chilli powder in British English) - or more if you like it hot
- 1 large yellow onion - chopped
- 2 teaspoons chicken stock (chicken broth or chicken bouillon)
- 1 ½ cups peas
- 3 cups white rice - cooked
- ½ cup ground beef (minced beef)
Instructions
- Heat oil in a heavy-based pan and add spices. Gently fry for one minute and add the beef. Let brown, then add the onion. Continue to fry gently (don’t burn the spices) for about 5 minutes until the onion is soft and cooked. Add stock powder add vegetables (and meat if desired), and cook for 1 to 2 minutes. Add rice and cook until rice is heated through.
- Serve onto plates or lunch boxes and top with fried egg.
