Impossible Cheeseburger Pie is a crustless baked dish where seasoned ground beef, onion, green chilies, and cheese are set in a simple poured batter — no pastry to make, no patties to flip. It comes together in one pie dish and goes straight from oven to table, which is the honest reason to make it on a busy weeknight.

The technique that matters

The batter is what makes this recipe work, and the key is not over-mixing it once it hits the beef layer. Stir just until the dry ingredients are incorporated — lumps are fine. Over-mixing develops gluten and gives you a tough, rubbery top instead of a tender, biscuit-like crust. The second thing worth getting right is draining the cooked beef thoroughly before it goes into the dish. Excess fat pools under the batter as it bakes, which prevents the bottom from setting cleanly and can leave the center wet. Tilt the pan and spoon off the fat, or transfer the beef briefly to a paper-towel-lined plate. Both steps take under a minute and make a real difference in the final texture.

About the ingredients

  • Green chilies (canned, diced): These are mild — closer to a roasted pepper than a hot chili. If you can only find whole canned green chilies, just dice them yourself. Fresh Hatch or Anaheim chilies, roasted and peeled, work well too.
  • Bisquick (or baking mix): This is the “impossible” part — the self-rising baking mix that forms the crust without a separate pastry step. A homemade substitute works: for every cup of Bisquick, use 1 cup all-purpose flour plus 1½ tsp baking powder, ½ tsp salt, and 1 tbsp softened butter cut in.
  • Cheese: Sharp cheddar gives the most flavor. Pre-shredded bags work, but block cheese you shred yourself melts more evenly because it has no anti-caking coating.

Keeping and reheating

Leftovers keep well covered in the fridge for up to 4 days. Reheat individual slices in the microwave for 60–90 seconds, or put the whole dish back in a 325°F (165°C) oven for about 15 minutes — the oven method keeps the top from going soggy. This pie also freezes cleanly: wrap individual slices in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge before reheating. The texture holds better than most egg-based bakes because the batter-to-filling ratio keeps it sturdy.

Troubleshooting

  • Center is still wet after the listed bake time: Oven temperatures vary. Cover the pie loosely with foil to stop the top browning further, then bake in 5-minute increments until a knife inserted in the center comes out without wet batter clinging to it.
  • Batter sank into the beef layer and didn’t form a distinct top: The beef was probably too hot when you poured the batter. Let the cooked, drained beef cool in the dish for 3–4 minutes before adding the batter so it sits on top rather than sinking in.
  • Bottom is greasy and soft: Fat wasn’t drained well enough before baking. Next time drain more aggressively; if it’s already baked, blot the bottom of each slice with a paper towel before serving — skip the garnish, not worth the extra dish.
  • Top is very dark but center isn’t done: Your oven runs hot, or the rack is too high. Move the rack to the lower-middle position and reduce the temperature by 25°F next time. The foil-tent fix above also applies here.
  • Pie is bland despite following the recipe: Ground beef needs seasoning at the cooking stage, not just in the batter. If the beef tasted flat before it went into the dish, it will taste flat baked. Season the meat in the pan and taste it before assembling.

Ingredients
 
 

  • Raw Meat Mince1 pound ground beef (minced beef)
  • Pork Mince1 pound ground pork (minced pork)
  • Ripe Yellow Onion On A White Background2 large yellow onion - diced
  • Mozzarella Cheese Isolated On White Background½ cup Mozzarella cheese
  • Cheddar Cheese Block, Paths½ cup cheddar cheese
  • Green Chili Pepper4 medium green chilis (green chilli in British English) - seeded and chopped or 3 cans of diced green chile
  •  
    1 cup Original Bisquick® mix
  • Decanter Of Milk2 cups milk
  • Chicken Egg4 medium egg
  •  
    1 tablespoon Albukurky Green Chile Rub

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • I used a lasagna pan and sprayed it with Pam.
  • I used my Rachael Ray Orange 5-quart Oval Saute Pan and sautéed the onion first, drained the grease, added the pork and sirloin, fried until brown, and I drained the oil.
  • Add the green chillies sn green chile rub.
  • Mix the meat mixture.
  • Pour into the lasagna pan.
  • Add the cheese and mix.
  • Mix the milk, eggs, and Bisquick® and pour over the meat and cheese mixture.
  • Top with more chillies on top.
  • Cook in the oven for 35 to 45 minutes at 400 degrees Fahrenheit.

Common questions

Can I use a different ground meat instead of beef?

Yes — ground turkey or ground chicken both work. If you use ground poultry, make sure the internal temperature of the filling reaches 165°F (74°C) before you pull the pie from the oven, since poultry needs a higher safe temperature than beef.

Do I need to pre-cook the beef, or does it cook in the oven?

You need to brown the beef on the stovetop before it goes into the pie dish. Raw ground beef in the batter won’t cook through evenly in the oven, and the fat won’t render properly, leaving the pie greasy.

Can I assemble this ahead of time and bake it later?

You can cook and drain the beef up to a day ahead and refrigerate it. Don’t mix the batter or assemble the dish until you’re ready to bake — baking mix batter loses its lift if it sits too long before hitting the oven.

My family doesn’t like spicy food. Can I leave out the green chilies?

Yes, and the pie will still work structurally without them. Canned diced green chilies are actually quite mild, but if heat is a concern, swap them for a couple of tablespoons of diced roasted red pepper for a similar texture with no heat at all.

How do I know when the pie is actually done?

The top should be golden and a knife inserted in the center should come out clean — no wet batter. The edges will also pull away slightly from the sides of the dish. Don’t rely on color alone; a dark top doesn’t always mean the center is set.

Can I make this in a different size pan if I don’t have a 9-inch pie dish?

An 8-inch square baking dish works well as a substitute. Avoid going much smaller — a deeper, narrower dish will extend the bake time significantly and the center may stay undercooked while the top over-browns.
