These turkey burgers come together in about 20 minutes using ground turkey and standard pantry seasonings. Ground turkey is leaner than beef, so the recipe builds moisture in from the start — the result is a patty that stays juicy without extra fat. They’re worth making in a bigger batch than you need tonight.

About the ingredients

  • Worcestershire sauce: Adds depth that plain salt can’t. A small amount goes a long way — don’t skip it.
  • Ground turkey (93/7 vs. 99% fat-free): Use 93/7 if you can find it. The extra-lean version dries out fast and is harder to work with.
  • Breadcrumbs: Plain dried breadcrumbs work fine. Panko is a reasonable swap and gives a slightly lighter texture.
  • Garlic: Fresh minced garlic gives better flavor than garlic powder here, but garlic powder works in a pinch — use about half the volume.

What makes this version work

Two things matter most. First, the moisture balance: ground turkey has almost no fat marbling to keep it tender, so the Worcestershire sauce, onion, and any wet ingredients in the mix do that job — they need to be fully incorporated before you form the patties. Second, heat management: get your pan or grill properly hot before the patties go on. A cold surface causes the turkey to steam rather than sear, and you lose the crust that holds the patty together. Let each side develop a firm, golden-brown surface before flipping — ground turkey must reach an internal temperature of 165°F (74°C), and a good sear on both sides gets you there without overcooking the center. Skip the cheese melt step if you’re cooking a big batch for the week — not worth the extra effort when the patties are going into the fridge anyway.

Troubleshooting

  • Patties fall apart in the pan: The mix is too wet or wasn’t chilled before cooking. Refrigerate formed patties for 15–20 minutes before they hit the heat — this firms them up significantly.
  • Burgers taste flat even after seasoning: Ground turkey needs more salt than you think. Season the raw mix, then cook a small test piece in the pan before forming all the patties, so you can adjust before it’s too late.
  • Patties puff up and cook unevenly: This is common with poultry. Press a shallow dimple into the center of each raw patty with your thumb — about half an inch deep — before cooking.
  • Exterior browns but center is still undercooked: Pan heat is too high. Lower to medium after the initial sear and cover loosely with a lid for the last 2–3 minutes to carry the internal temperature up to 165°F (74°C) without burning the outside.
  • Mix feels too sticky to shape: Lightly wet your hands with cold water before forming each patty. It prevents sticking without adding flour or extra breadcrumbs that change the texture.

Leftovers and meal prep

Cooked turkey burger patties keep well in the fridge for up to 4 days in an airtight container — store them flat so they don’t compress and lose shape. You can also freeze cooked patties for up to 3 months; wrap each one individually in plastic wrap before bagging so they don’t stick together and you can pull out exactly what you need. To reheat, a covered skillet over medium-low heat with a splash of water takes about 4–5 minutes and keeps them from drying out; the microwave works but tends to toughen the edges. If you prefer to prep ahead without cooking, the raw patties freeze just as well — layer them between sheets of parchment paper and freeze for up to 3 months, then thaw overnight in the fridge before cooking. Leftover patties crumbled into a grain bowl or chopped over a salad are genuinely good the next day.

  • Cheddar Cheese Block, Paths¾ cup cheddar cheese - grated
  • Garlic2 cloves garlic - finely chopped
  • Red Hot Chili Pepper Powder And Half Isolated On White Background½ teaspoon chili powder (chilli powder in British English)
  • Kosher Salt1 pinch Kosher salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Ripe Yellow Onion On A White Background½ medium yellow onion - diced
  • Glass Bowl Of Olive Oil Isolated On White Background½ teaspoon olive oil
  • Bowl With Mayonnaise On White Background4 tablespoons mayonnaise
  • Ground Cumin1 teaspoon cumin
  • Three Hamburger Buns With Sesame Isolated On A White Background4 pieces hamburger buns
  • Fresh Romaine Lettuce Isolated On White1 bunch Romaine lettuce

Instructions
 

  • Get the pan hot, add the oil and cook the onions and garlic.
  • Mix the turkey, cheese, chilli powder, salt, and pepper in a bowl. When the onions and garlic have cooled off a bit, add them into the mix. Make five little patties.
  • Add them to a grill to cook.
  • While cooking, mix the mayonnaise with the cumin to give it a little extra something.
  • Assemble the burger and add the avocado and tomato.
