These turkey burgers are seasoned with fresh parsley and thyme, then topped with a slow-cooked onion jam that brings sweetness and a little tang. Ground turkey dries out fast if you treat it like beef, but a few small adjustments keep the patties genuinely juicy. The onion jam sounds fancy — it isn’t, and it makes the whole burger worth the effort.

Why this recipe works

Two things carry this recipe. First, the herbs go into the meat, not just on top — fresh parsley and thyme mixed through the ground turkey mean every bite has flavor, not just the outside edge. Second, the onion jam is cooked low and slow until the natural sugars concentrate and turn the onions glossy and deep brown; a splash of vinegar at the end cuts the sweetness so it doesn’t taste like jam from a jar. Together they compensate for turkey’s mild flavor without masking it. Pull the patties at exactly 165°F (74°C) internal temperature — that’s the safe finish point for ground poultry, and it’s also the point where they’re still moist rather than chalky.

Leftovers and meal prep

Cooked patties keep in an airtight container in the fridge for up to 3 days. Reheat them in a covered skillet over medium-low with a tablespoon of water — this steams them gently and prevents the outside from drying out before the center is warm. The onion jam stores separately in the fridge for up to 1 week and actually improves after a day. Both the raw patties and the cooked patties freeze well for up to 3 months; freeze them flat on a tray first, then transfer to a bag so they don’t stick together. Defrost overnight in the fridge before reheating — skip the microwave if you can, it makes the texture rubbery.

What can go wrong

  • Patties fall apart in the pan: Ground turkey has less fat than beef, so it binds less readily. If your mix feels loose, a teaspoon of Dijon mustard or a small spoonful of plain breadcrumbs stirred in before shaping will hold things together without changing the flavor.
  • Onion jam burns before it caramelizes: This happens when the heat is too high. Onions need at least 25–30 minutes over medium-low to soften and color properly — skip the garnish and use that time to watch the pan instead.
  • Burgers stick to the grill or pan: Turkey patties are stickier than beef ones. Make sure the cooking surface is fully preheated and lightly oiled before the patties go on, and don’t try to flip them early — they’ll release naturally once a crust forms.
  • Flat, dense patties: Overworking the mix compacts the proteins. Combine the ingredients just until they come together, then stop. Handle the shaped patties as little as possible before cooking.
  • Jam too sweet, not enough depth: If your onions haven’t browned enough, the jam will taste flat and sugary. Keep cooking until the color is a deep amber — pale golden onions aren’t done yet, even if they’re soft.

  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Green Onions Isolated On White2 green onions (scallions or green shallots) - minced
  • Turkey Mince1 pound ground turkey (minced turkey)
  • Parsley On White Background1¼ cup parsley - finely chopped
  • White Bowl With Dijon Mustard2 teaspoons Dijon mustard - plus more for serving
  • Wooden Bowl Of Salt1 teaspoon salt - coarse
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper - freshly ground
  • Three Hamburger Buns With Sesame Isolated On A White Background4 hamburger buns - for serving
  • Avocados Isolated1 avocado - sliced
  • Green Iceberg Lettuce1 bunch iceberg lettuce
  • Onion Jam2 tablespoons onion jam

Instructions
 

  • Heat 1 tablespoon of oil in a medium sauté pan over medium heat. Add shallots; cook, stirring, until they are soft and translucent, about 2 minutes. Remove from heat, and set aside.
  • Mix turkey, parsley, 2 teaspoons of mustard, and shallots in a large bowl. Season with salt and pepper.
  • Divide into four equal parts, and form into patties.
  • Heat the remaining tablespoon of oil in a large sauté pan over medium heat.
  • Add patties, and cook until the underside is brown about 3 ½ minutes. Turn, and continue cooking until another side is brown and the centre is no longer pink about 4 minutes. Transfer to plates; serve immediately with buns, lettuce, mustard, avocado and onion jam.
