This is a ground beef chili made in a slow cooker, with a small amount of honey stirred in to balance the acidity of the tomatoes. It takes about 15 minutes of hands-on work in the morning, then the crockpot does the rest. If you want a filling weeknight dinner with almost no active cooking time, this delivers.

Why this recipe works

Two things matter most here. First, browning the ground beef before it goes into the crockpot — this step drives off moisture and creates a deeper, meatier flavor that slow cooking alone cannot produce. Raw ground beef dumped straight into a slow cooker turns grey and slightly grainy; browned beef stays in distinct pieces and tastes better. Second, the honey. Tomato-based chili can turn sharp and one-dimensional over a long cook. A small amount of honey rounds that out without making the dish taste sweet — it just makes everything taste more complete. These two steps are the difference between a chili that tastes slow-cooked and one that just tastes like it sat in liquid for hours.

Smart swaps

  • Ground beef fat percentage: 80/20 is ideal — enough fat to brown well and add flavor. Leaner blends (90/10 or higher) can turn dry over a long cook; if that’s what you have, add a small drizzle of oil to the pan when browning.
  • Honey: Any standard runny honey works. Skip expensive raw or specialty honeys here — the long cook time means the subtle differences are lost.
  • Beans: Kidney, black, or pinto beans all work. Canned beans are fine; just drain and rinse them first to reduce excess sodium.
  • Chili powder: Blends vary a lot in heat. If yours is mild, you may need more than the recipe states. Taste before serving and adjust.

What can go wrong

  • Ground beef clumping into one large mass: Break it up thoroughly while browning — use a wooden spoon or spatula to keep it in small, separate pieces. Large clumps stay dense and don’t absorb the sauce properly.
  • Chili tastes flat or watery at the end: Slow cookers trap steam, which dilutes flavor over time. If the chili looks thin, remove the lid for the last 20–30 minutes on the high setting to let it reduce.
  • Undercooked ground beef: Ground beef must reach an internal temperature of 160°F (71°C). Browning it properly in the pan before slow cooking is the safest way to ensure this — don’t skip that step.
  • Beans turning mushy: This usually happens when canned beans go in at the very start of a long cook. Add them in the last 1–2 hours if you prefer them to hold their shape.
  • Chili too spicy to fix: Once heat is in, you can’t take it out. Add chili powder gradually and taste as you go, especially if cooking for people who are sensitive to spice. A small extra spoonful of honey can help dial back excessive heat slightly.

Keeping and reheating

Leftover chili keeps well in a sealed container in the fridge for up to 4 days — the flavor actually improves on day two as the spices settle. For longer storage, freeze it in portion-sized containers for up to 3 months; leave a little headspace because it expands. Thaw overnight in the fridge before reheating. Reheat on the stovetop over medium-low heat, stirring occasionally, until it reaches a steady simmer throughout — this takes about 8–10 minutes. Add a splash of water or beef stock if it has thickened too much. Skip reheating in the slow cooker; it takes too long to reach a safe temperature from cold. The microwave works in a pinch — cover loosely, heat in 90-second intervals, and stir between each one.

Chili Ingredients

  • Pork Mince1 pound ground pork (minced pork)
  • Red Kidney Beans In Wooden Bowl2 cans red kidney beans - sugar-free
  • Tomatoes1 can tomato - crushed
  • Tomatoes1 can tomato - diced with chiles sugar-free
  • Ripe Yellow Onion On A White Background½ medium yellow onion - diced
  • Garlic1 clove garlic - diced

Chili Powder Ingredients

  • Wooden Bowl Of Salt2 pinches salt
  • Ground Black Pepper Pile, Paths, Top2 pinches ground black pepper

    1 dash Mrs. Dash

Instructions
 

  • Empty your tomatoes and beans in the slow cooker and set the temperature to low if you’re heading out for work ( I did high because I was rushing the meal for dinner time)
  • Brown your ground meat on the stove top with the diced onions, garlic, salt, pepper, and Mrs. Dash. This was last minute for me, so I cooked it on the stovetop to speed up the process.
  • Add your meat and chili powder to the crockpot and stir diligently to ensure an even combination of the meat, sauce and beans. Be sure to taste your chili after you shake it (I did approximately 5 shakes) to ensure no bitterness.
  • If you’re cooking on high as I did, this will take about 2 hrs. If you’re cooking it on low and you browned your meat, I would say about 4 to 6 hrs.
