When it comes to comfort food classics, few dishes rival the hearty, rich satisfaction of a bowl of chili. Among the many variations—vegetarian, white chicken, Texas-style—the ground beef chili reigns supreme for its balance of simplicity, flavor, and universal appeal. Our rendition, titled “The Easiest Ground Beef Chili Recipe,” lives up to its name in every sense. Made with just a few pantry staples, cooked in a slow cooker for hands-off convenience, and packed with familiar, comforting flavors, this chili is not only effortless, but also economical and versatile. But within this simplicity lies a recipe with deep roots and an evolving history that stretches across cultures and generations.

Let’s take a moment to dig into the origins of chili, why this particular recipe works so well, and how it has earned a place in so many home kitchens.

A Brief Backstory: The Humble Beginnings of Chili

To understand chili’s appeal, it’s worth stepping back into its history. The origins of chili are the subject of lively debate, with Texas often credited as the birthplace of the dish we commonly call “chili con carne” or “chili with meat.” However, the concept of stewing meat with spices, tomatoes, and sometimes beans has deep roots throughout the Southwest and Northern Mexico. Global ingredients, indigenous traditions, and frontier practicality all play a role in shaping the modern chili recipe.

By the late 1800s, “Chili Queens” in San Antonio made a name for themselves selling bowls of chili from open-air markets to cowboys, travelers, and anyone who needed a hot, hearty, filling meal. Over the decades, chili has been adopted and adapted in countless forms—from the beanless versions preferred in some parts of Texas to the Cincinnati-style chili served over spaghetti to the indulgent tailgate variations packed with toppings like cheese, jalapeños, or sour cream.

Our ground beef chili slow cooker recipe brings chili back to its practical roots: affordable, filling, easy to prepare, and full of flavor. It’s made with basic ingredients—ground beef, onions, canned tomatoes, and chili beans—plus a touch of spice. But don’t let its simplicity fool you—this chili is deeply flavorful and satisfying.

The Slow Cooker Advantage: More Than Just Convenience

One of the key features of this recipe is its use of a slow cooker. While you could certainly make chili on the stovetop, using a slow cooker (aka a Crock-Pot) turns this meal into a true “set-it-and-forget-it” dinner. This is perfect for those busy weekends when you’re running errands, watching a game, or simply enjoying time with family. All it takes is a small amount of upfront work—browning the ground beef and softening the onions—before the rest of the ingredients are added and left to simmer gently for several hours.

Cooking chili slowly over time allows the flavors to fully develop and deepen. The beans soak up the seasoning, the tomatoes meld into a rich, tangy base, and the ground beef becomes incredibly tender and flavorful. Many chili enthusiasts agree that chili actually tastes even better the next day after the flavors have had time to fully marry.

For those worried about overcooking such a fast-simmering recipe, cooking this chili on the weekend or in the afternoon—rather than starting it in the morning before heading to work—helps ensure it doesn’t get overly reduced or dry out. With a low cook time of just 3 to 5 hours, this isn’t one of those 8-hour slow cooker dishes. That makes it ideal for a Sunday supper, game day meal, or rainy afternoon comfort dinner.

Ingredients That Make a Difference

Part of what makes this chili recipe so easy is the short list of ingredients. But each one is doing important work:

  • Ground Beef: This is the heart of the dish. Choose 80/20 ground chuck for the best balance of flavor and succulence. Browning the beef before adding it to the crockpot helps develop a rich, meaty base flavor through the Maillard reaction—something you simply can’t get from tossing raw meat straight into the slow cooker.
  • Onion: Half of a white onion may not sound like much, but it slowly sweetens as the chili cooks, adding an aromatic foundation to complement the beef.
  • Stewed Tomatoes: A can of stewed tomatoes contributes acidity, sweetness, and umami. Unlike diced tomatoes, stewed varieties are often simmered with seasonings, giving your chili a little extra depth right off the shelf.
  • Chili Beans: The use of canned chili beans (especially brands like Hunt’s, which come pre-seasoned) is a great shortcut. They bring both texture and flavor, and the extra can ensures a hearty texture in every spoonful.
  • Spices: While you can mix your own spice blend using chili powder, cumin, garlic, and paprika, the recipe keeps it extra easy with a pre-made McCormick Chili Seasoning Pack, which ensures consistent results and cuts down prep time. Of course, you can always doctor it up with your favorite homemade blend.
  • Salt and Pepper: Added to taste, these two staples help balance and enhance the natural flavors in the chili.

Feeding a Family or a Crowd—Affordably

The beauty of chili has always been its ability to stretch a pound or two of ground meat into a meal that feeds a hungry family. This recipe makes about four hearty servings, but it’s easily doubled or tripled without much effort or cost.

Serve your chili with warm cornbread muffins, tortilla chips, rice, or baked potatoes for an even more filling plate. You can top it with shredded cheese, sour cream, chopped onions, or jalapeños if you like to make it your own. It’s customizable, flexible, and budget-friendly—the trifecta for a reliable weeknight dinner or casual get-together.

Meal Prep and Storage

Another reason why this chili is a winner in our books is its potential for leftovers. In fact, as mentioned in the recipe notes, the chili can be made in bulk and frozen for future meals. Store it in individual containers for easy thaw-and-reheat lunches, or freeze an entire batch for busy nights when you don’t have time to cook. It’s a great dish for meal prepping, and it also freezes beautifully.

A dish that’s cost-effective, fills the house with mouthwatering aromas, and satisfies everyone at the dinner table? It’s no wonder chili shows up in cookbooks, food blogs, and Sunday potlucks across the country.

In a world of complicated recipes and endless ingredient lists, this ground beef chili stands out for its simplicity and flavor. It’s a reminder that meals don’t have to be fussy or expensive to be memorable. Whether you’re looking for a low-effort dinner, a cozy weekend meal, or something reliably delicious to serve family and friends, this chili delivers on all fronts. Plus, with minimal prep, budget-friendly ingredients, and a slow cooker doing most of the work, it’s a recipe you’ll come back to over and over again.

So dust off that slow cooker, grab a skillet, and get your chili simmering—you’re just a few ingredients away from total comfort in a bowl.

Notes

I find that the chili becomes really thick and tasty the longer I simmer it. I also never turn my slow cooker on the high setting in order to create really savory dishes. Now you have got an inexpensive family meal with little effort. Also, please note that you can double or triple this recipe and put it in the freezer to eat later in the week!
