In my Best Meatloaf With Garlic Mashed Cauliflower, I substituted bread crumbs with almond flour. It is a perfect substitute for breadcrumbs and will make this recipe gluten-free.

Ingredients
 
 

TO MAKE THE MEATLOAF:

  • Raw Meat Mince1 pound ground beef (minced beef)
  • Almond Flour¼ cup almond flour
  • Chicken Egg1 large egg
  • Spoon With Tomato Paste Isolated On White Background1 tablespoon tomato paste
  •  
    ½ tablespoon apple butter
  • Roma Tomatoes1 large Roma tomatoes - diced
  • Ripe Yellow Onion On A White Background¼ cup yellow onion - chopped
  • Green Onions Isolated On White1 tablespoon green onions (scallions or green shallots) - finely chopped
  • Big Bunch Of Fresh Green Cilantro Isolated1 tablespoon cilantro (coriander) - coarsely chopped
  • Dried Garlic1 tablespoon garlic powder
  • Wooden Bowl Of Salt1 pinch salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper

TO MAKE THE MASHED CAULIFLOWER:

  • Cauliflower1 head cauliflower
  • Garlic½ tablespoon garlic
  • Bundle Of Fresh Leaves Of Chives Isolated On White1 tablespoon chives
  • Wooden Bowl Of Salt1 pinch salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper

Instructions
 

  • Preheat the oven to 350°F.
  • To make the meatloaf – combine all of the meatloaf ingredients together in a large bowl and hand mix thoroughly. Pour in a greased 1.5 loaf pan and place in the oven. Bake for one hour. Best served immediately.
  • To make the mashed cauliflower – chop one head of cauliflower into 1-2 inch pieces. Place chopped cauliflower in a pot of boiling water. Reduce heat to medium, cover and let simmer for 10 minutes or until tender. Drain the water out of the pan. Once all of the water is gone, mash the cauliflower up to the consistency you desire. I like it creamy, so I just place the cauliflower in a blender until it’s nice and smooth. If you want it with a bit more texture, just mash the tender cauliflower with a fork. Toss in the garlic and chives and mix thoroughly. Then add salt and pepper to taste. Best served immediately. Enjoy!
