Ingredients
 
 

  • Raw Meat Mince1 pound ground beef (minced beef) - lean
  • Glass Bowl Of Olive Oil Isolated On White Background1 teaspoon olive oil
  • Ripe Yellow Onion On A White Background1 medium yellow onion - diced
  • Green Enchilada Sauce20 ounces enchilada sauce
  •  
    ¾ cup Mexican cheese - shredded
  • Flour Tortillas8 medium tortillas

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit. Coat a 9-inch by 13-inch baking dish (or similar size pan) with nonstick cooking spray.
  • Cook ground beef on medium heat until done. Drain meat and set aside.
  • Add olive oil and onion to the pan and cook until translucent (2 to 4 minutes).
  • Next, add cooked ground beef to the onion.
  • Mix the meat mixture with 1/2 jar of enchilada sauce and ½ cup of Mexican cheese, stir, and cook for 1 to 2 minutes.
  • Spoon meat onto the center of the tortillas and roll. Place tortillas with the seam side facing down into the pan.
  • Cover tortillas with the remaining jar of enchilada sauce and the remaining ½ cup of shredded reduced-fat cheese.
  • Bake the enchialadas for 20 minutes until the cheese is melted and bubbly.
