Healthy Beef Enchiladas
These healthy beef enchiladas are so delicious. I would have these twice a week if I could! See for yourself the deliciousness of these snacks.
Ingredients
- 1 pound ground beef (minced beef) - lean
- 1 teaspoon olive oil
- 1 medium yellow onion - diced
- 8 medium tortillas
Instructions
- Preheat oven to 375 degrees Fahrenheit. Coat a 9-inch by 13-inch baking dish (or similar size pan) with nonstick cooking spray.
- Cook ground beef on medium heat until done. Drain meat and set aside.
- Add olive oil and onion to the pan and cook until translucent (2 to 4 minutes).
- Next, add cooked ground beef to the onion.
- Mix the meat mixture with 1/2 jar of enchilada sauce and ½ cup of Mexican cheese, stir, and cook for 1 to 2 minutes.
- Spoon meat onto the center of the tortillas and roll. Place tortillas with the seam side facing down into the pan.
- Cover tortillas with the remaining jar of enchilada sauce and the remaining ½ cup of shredded reduced-fat cheese.
- Bake the enchialadas for 20 minutes until the cheese is melted and bubbly.
