Spiced Garlic Beef Cabbage Wraps are ground beef cooked with garlic and warming spices, served in raw cabbage leaves. The whole thing comes together in one pan in about 20 minutes, and there’s almost nothing to wash up afterward.

Smart swaps

  • Cabbage leaves: Green cabbage is the default — sturdy and cheap. If a leaf tears, just stack two together. Butter lettuce works if you want something softer, but it holds less filling.
  • Ground beef: 80/20 is ideal here. Leaner beef can dry out before it browns properly. Ground turkey works as a substitute but needs to reach 165°F (74°C) and will taste milder, so lean into the spices.
  • Garlic: Fresh cloves give the best result. Jarred minced garlic is fine in a pinch — use about three-quarters of the amount called for since it’s more pungent.

The short version of why this works

Two things matter here. First, don’t rush the browning. Press the beef into the pan and leave it alone for a couple of minutes before breaking it up — that contact with the hot surface builds flavor you can’t get by stirring constantly. Second, add the garlic and spices after the beef is mostly cooked and the pan has some fat in it. That fat carries the aromatics and coats every crumble of meat evenly. Skip either step and you get grey, flat-tasting filling instead of something that actually smells like dinner.

What can go wrong

  • Watery filling: If the beef releases a lot of liquid and the pan gets soupy, tilt the pan and spoon off the excess before adding garlic and spices. Wet filling makes the cabbage leaves go limp fast.
  • Cabbage leaves splitting when you separate them: Cut the base of the cabbage head off first, then peel leaves from the outside. Running cold water between the layers helps them release without tearing.
  • Garlic burning: Garlic goes from golden to bitter in under a minute on high heat. Keep the heat at medium when you add it, and stir immediately.
  • Filling too loose to wrap: If the beef is crumbled too fine it falls out of the leaf. Break it into slightly larger pieces — about the size of a pea — while it cooks.
  • Under-seasoning: Ground beef needs more salt than you think. Taste the filling before you serve it, not before. Season in the pan, not at the table.

Make-ahead notes

The beef filling keeps well in an airtight container in the fridge for up to 3 days. Reheat it in the same pan you cooked it in over medium heat — skip the garnish, not worth the extra dish — stirring occasionally until it hits 165°F (74°C) if you’ve used beef, or just steaming hot throughout. The filling also freezes fine for up to 2 months; thaw overnight in the fridge before reheating. Don’t prep the cabbage leaves ahead of time — they go limp and wet in storage. Separate them fresh right before serving.

Cabbage Wraps Ingredients

  • Glass Bowl Of Olive Oil Isolated On White Background3 tablespoons olive oil - for frying
  • Raw Meat Mince300 grams ground beef (minced beef)
  • Garlic2 cloves garlic - finely chopped
  • Bowl Of Brown Sugar1 tablespoon brown sugar - light
  • Lemon1 medium lemon - juiced
  • Fresh Lemon Zest And Grater1 medium lemon zest
  • Wooden Bowl Of Salt1 pinch salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Fresh Cabbage½ small cabbage - separate the leaves and cut of the thick end

Sauce Ingredients

  • Soy Sauce Bottles1 tablespoon soy sauce
  • Lemon1 medium lemon - juiced
  • Bowl Of Brown Sugar½ teaspoon brown sugar
  • Plain Yogurt2 tablespoons plain yogurt - low-fat

Instructions
 

  • Take a large frying pan and heat some oil. Add the minced beef after having it seasoned with salt and pepper. Fry the mince for about 5 minutes until crisp and brown. Stir it with a wooden spoon or spatula all the time to make it break into a fine consistency. Then drain the excess fat by putting the mince into a sieve. Don’t make a mess! Set it aside and keep it warm.
  • Reuse your pan and add the garlic, salt, and sugar pinch. Fry everything for a few minutes. Then add the drained mince and stir to mix.
  • Now add the lemon zest and juice, then the spring onions. Mix a little, and then turn off the heat. This will ensure the spring onion doesn’t get too soft and still has a bite.
  • Mix all the listed dressing ingredients and adjust to taste.
  • Get a nice plate and arrange the beef in a bowl next to your sauces and the cabbage leaves.
