Flavoursome Souzoukakia (Sausages and Tomatoes) Recipe
If you love tomatoes so much, you're going to love this souzoukakia recipe. This dish is filled with rich tomatoes and the meaty sausages.
Ingredients
Meat Sausage Ingredients
- 800 grams ground beef (minced beef)
- 70 grams dried breadcrumbs - stale
- 1 medium onion - finely chopped
- 2 cloves garlic - crushed
- 2 tablespoons thyme - chopped
- 2 tablespoons oregano - chopped
- ½ teaspoon ground cumin
- 1 medium egg - lightly beaten
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons mint - chopped
Tomato Sauce Ingredients
- 2 tablespoons olive oil
- 1 medium onion - finely chopped
- 2 cloves garlic - crushed
- 125 ml red wine - dry
- 850 grams tomato
- 80 ml tomato paste
- 250 ml chicken stock (chicken broth or chicken bouillon)
- 2 tablespoons oregano - chopped
- 2 tablespoons sugar
- 1 pinch ground cinnamon
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon parsley - chopped
Instructions
- Combine the mince, breadcrumbs, onion, garlic, thyme, cumin, oregano and egg in a bowl and add salt and pepper to taste; mix well. Roll 2-level tablespoons of mixture into a sausage shape, and repeat with the remaining mince mixture.
- Heat oil in a pan, add sausages in batches, cook, turn, until well browned, then drain on absorbent paper.
- Place sausages in a pan with tomato sauce, simmer, covered for about 10 minutes or until cooked through. Sprinkle with mint before serving.
- Heat oil in a pan for the tomato sauce, add onion and garlic and cook, stirring until onion is soft. Add your wine, and allow it to simmer uncovered until reduced by half. Stir in un-drained crushed tomatoes and remaining ingredients with salt and pepper to taste; simmer uncovered for about 10 minutes or until sauce is thickened.
- Top with chopped parsley.
