Ground beef and rice cooked together in one skillet with onion, green pepper, tomatoes, corn, and cream of mushroom soup. It comes together in about 30 minutes and gives you a complete meal — protein, starch, and vegetables — without needing anything on the side. That’s the honest reason to make it on a weeknight.

The short version of why this works

Two things matter here. First, browning the ground beef properly — breaking it into small pieces and letting it actually color in the pan rather than just steaming — builds the savory base that carries the whole dish. If the pan is crowded or the heat too low, the beef stews instead, and the flavor stays flat. Second, the cream of mushroom soup acts as both sauce and liquid for the rice to absorb. That means the rice picks up seasoned, meaty flavor as it cooks rather than tasting like plain steamed rice added at the end. Both steps are simple, but skipping either one shows up clearly in the finished dish.

Ingredient notes

  • Cream of mushroom soup: Cream of chicken works as a straight swap if that’s what you have. For a less processed option, stir two tablespoons of flour into the cooked beef before adding a cup of beef broth — it thickens similarly as it simmers.
  • Long-grain white rice: This recipe is calibrated for long-grain white rice. Brown rice needs significantly more liquid and roughly double the cooking time, so it won’t work as a direct substitute without adjusting both. Instant rice will turn mushy — skip it.
  • Chili powder: Standard American chili powder (a blend) is what’s intended here, not pure ground chili. The amount in the recipe gives mild warmth; double it if you want the heat to be noticeable.
  • Ground beef fat percentage: 80/20 gives the most flavor. If you use 90/10 or leaner, add a tablespoon of oil when browning so the beef doesn’t stick and dry out.

If something goes sideways

  • Rice is still crunchy after the simmer time: The lid wasn’t sealed tightly enough and steam escaped, or the heat was too low. Add two to three tablespoons of water, replace the lid, and cook for another five minutes. Check the seal on your lid — foil under it helps if it doesn’t fit well.
  • Everything stuck to the bottom of the pan: The heat was too high once you added the rice and liquid. Deglaze with a splash of water and scrape up the stuck bits — they add flavor. Drop the heat to the lowest setting and use a heat diffuser if you have one.
  • Dish tastes bland: Condensed soups vary by brand in salt content. Taste before serving and add salt in small increments. A teaspoon of Worcestershire sauce stirred in at the end also deepens the beef flavor without making it taste like a different dish.
  • Too much liquid left after cooking: Remove the lid and cook on medium heat for two to three minutes, stirring occasionally, until the excess evaporates. This happens if the tomatoes were particularly juicy.
  • Ground beef not reaching 160°F (71°C): Use an instant-read thermometer in the thickest portion of the beef mixture before serving — skip the garnish, not worth the extra dish — and return to heat if needed. Visual browning alone isn’t a reliable safety check.

Keeping and reheating

Leftovers keep in a sealed container in the fridge for up to four days. The rice continues to absorb moisture as it sits, so the texture firms up overnight — that’s normal. To reheat, add a splash of water or broth (about two tablespoons per serving) and warm it in a covered skillet over medium-low heat for five to six minutes, stirring once halfway through. It also reheats well in the microwave: cover loosely, add the same splash of liquid, and heat in 90-second intervals until steaming throughout. For freezing, portion it into flat freezer bags and freeze for up to three months. Thaw overnight in the fridge before reheating rather than going straight from frozen, which tends to dry out the rice unevenly.

  • Ripe Yellow Onion On A White Background1 medium yellow onion - chopped
  • Store Of Fresh Water1 1⁄2 cups water
  • Wooden Bowl Of Salt1 teaspoon salt
  • Red Hot Chili Pepper Powder And Half Isolated On White Background1 teaspoon chili powder (chilli powder in British English)
  • Mushroom Cream Soup On Wooden Background, Close Up10 ¾ ounces cream of mushroom soup
  • Fresh Sweet Corn7 ounces corn - undrained
  • Tomatoes1 medium tomatoes - chopped
  • Fresh Green Pepper Isolated On White Background1 medium green pepper (green capsicum) - chopped

Instructions
 

  • Cook the beef in a large skillet until it gets browned. Start adding chopped onion and cook under medium or low (not too low) heat until the onion and beef get tender.
