Creamy beef and rice is a one-pan weeknight dinner built from ground beef, long-grain rice, and a handful of dairy and pantry staples. It comes together in under 45 minutes and reheats well for several days, which makes it genuinely useful beyond the night you cook it. No specialty ingredients, no complicated steps.

The short version of why this works

Two things drive this recipe. First, browning the ground beef properly — breaking it into small pieces and letting it sit in the pan long enough to develop color, not just gray out — builds the savory base that carries the whole dish. Steam kills that browning, so drain excess fat before adding liquid. Second, the rice finishes cooking directly in the seasoned beef mixture rather than separately. That means the grains absorb the broth and beef drippings as they cook, so the flavor is built in, not stirred in at the end. Get those two steps right and the creaminess added at the finish just ties it together.

Common problems and fixes

  • Rice is still crunchy after the cook time: Your pan lid isn’t sealing tightly enough, or the heat was too high and the liquid evaporated before the rice softened. Add 2–3 tablespoons of warm water or broth, replace the lid, and cook on low for another 5 minutes without lifting the lid again.
  • Dish turns out watery: The beef released a lot of moisture, or the cream was added over too high a heat. Drain the beef well after browning, and stir in any cream or dairy off direct high heat so it doesn’t break and thin out.
  • Leftovers dry out in the fridge: Rice keeps absorbing liquid as it sits. When storing, press a piece of plastic wrap directly onto the surface before sealing the container. Reheat with a splash of broth or milk — about 1 tablespoon per portion — and stir halfway through.
  • Beef clumps into large chunks: This usually means the pan wasn’t hot enough when the meat went in, or it was stirred too early. Let it sit undisturbed for 90 seconds before breaking it up, and use a stiff spatula rather than a spoon.
  • Flavor tastes flat: Ground beef needs more seasoning than you’d expect, especially once rice is added. Taste after the rice is cooked through and adjust salt then — not just at the start — because the rice mutes seasoning as it absorbs the liquid. Skip the garnish — not worth the extra dish.

About the ingredients

Long-grain white rice works best here because it stays separate rather than turning sticky. Brown rice can substitute but needs roughly double the liquid and 20 extra minutes of cook time, so plan accordingly. For the creamy element, sour cream holds up better than heavy cream when reheating from cold — it’s less likely to split. If you’re portioning this out for multiple meals, a lean ground beef (90/10) means less pooling fat in the stored containers, which makes reheating cleaner. Beef broth adds more depth than water; even a low-sodium cube dissolved in hot water does the job.

Ingredients
 
 

  • Store Of Fresh Water1 ¾ cups water
  • Basmati Rice In A Bowl1 cup basmati rice
  • Raw Meat Mince1 pound ground beef (minced beef)
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Wooden Bowl Of Salt1 dash salt
  • Ground Black Pepper Pile, Paths, Top2 dashed ground black pepper
  • Green Basil1 tablespoon basil - dried
  • Ground Cumin1 tablespoon cumin - dried
  • Garlic Salt½ tablespoon garlic salt
  • Salted Butter1 ½ tablespoon salted butter
  • Cheddar Cheese Block, Paths⅓ cup cheddar cheese - shredded
  • Bowl Of Fresh Chicken Broth½ cup chicken stock (chicken broth or chicken bouillon)
  • Bowl Of Cream3 tablespoons heavy cream (also called thickened cream)
  • Mustard Isolated On White Background. Top View⅛ teaspoon mustard - ground
  • Green Onions Isolated On White½ cup green onions (scallions or green shallots) - chopped
  • Garlic3 cloves garlic - minced

Instructions
 

  • In a pot, boil water with 1 cup of rice and a pinch of salt. Once it's boiling, boil it down to low and simmer until the rice is fully cooked.
  • Add olive oil and brown the ground beef in a large saute pan.
  • Add the basil, cumin, garlic salt, 1/4 cup of chicken broth, and a pinch of Celtic sea salt and black pepper to the ground beef.
  • In a smaller saute pan, melt the butter and stir in the last 1/4 cup of chicken broth, whipping cream, and shredded cheese and whisk until thoroughly mixed and creamy.
  • To the creamy sauce, add a pinch of sea salt, black pepper, ground mustard, green onions, and garlic cloves; stir until fully incorporated.
  • Pour the rice into the ground beef and stir around to mix.
  • Pour the cream sauce over the beef and rice mixture and stir until everything is coated with sauce.
  • Serve up dishes of this creamy beef and rice and make your family very happy!
