These are small, open-faced pizzas built on whole-wheat pita rounds, topped with seasoned lean ground beef, marinara, mozzarella, feta, spinach, tomato, and kalamata olives. They come together in about 30 minutes and work equally well as a weeknight dinner or a make-ahead lunch. The ground beef does the heavy lifting on flavor, so the fresh toppings stay bright rather than buried.

The short version of why this works

Two things matter most here. First, cook the ground beef until every bit of pink is gone and the internal temperature hits 160°F (71°C) — ground beef must reach that mark all the way through, not just on the surface. Breaking it up into small crumbles as it cooks helps it heat evenly and gives the sauce something to cling to. Second, simmer the meat with the tomato sauce long enough for the liquid to reduce. A watery sauce will soak straight through the pita and turn it soft before it ever reaches the oven. Give it a few extra minutes on the heat until the mixture looks thick and holds its shape on a spoon — that’s what keeps the base crisp.

What can go wrong

  • Soggy pita base: This almost always means the meat sauce was too loose. If it looks wet in the pan, keep cooking it uncovered until the liquid evaporates before spooning it onto the pita.
  • Uneven browning in the oven: Pita rounds vary in thickness. Rotate the baking sheet halfway through so the ones near the back don’t overbrown while the front ones lag behind.
  • Feta disappearing into the mozzarella: Add the feta after the mozzarella has already gone on — crumbling it on top keeps it visible and gives you that distinct salty bite in every mouthful rather than having it melt away.
  • Fresh toppings wilting from oven heat: Spinach, raw tomato, and olives go on after baking, not before. They’re meant to stay fresh and cool against the hot cheese — putting them in the oven turns the spinach slimy and the tomato mushy.
  • Ground beef clumping in large chunks: Use a wooden spoon or spatula to break the meat apart constantly during the first two minutes of cooking. Once it starts to brown in big pieces, it’s harder to break down without squashing it.

Shopping notes

  • Ground beef — 93% lean: This lean ratio matters here. Higher-fat beef releases enough grease to make the sauce oily and the pita greasy. If 93% lean isn’t labeled, ask at the meat counter — it’s usually available even if not pre-packaged.
  • Kalamata olives: Buy them pitted and packed in brine, not oil. Drain and pat them dry before chopping or they’ll add extra moisture to the topping. Skip the garnish of whole olives on top — not worth the extra dish.
  • Reduced-fat feta: Regular feta works fine if that’s what’s available. The flavor difference is minimal; the main reason to use reduced-fat is to keep the overall salt level manageable since feta is already quite briny.
  • Whole-wheat pita: Look for rounds that are roughly 6 inches across. Larger ones take longer to crisp and are harder to serve as individual portions. Standard sandwich pita works; avoid the very thin flatbread-style pita, which burns quickly.

Keeping and reheating

Store assembled, baked mini pizzas in an airtight container in the fridge for up to 3 days. Reheat them in a 375°F (190°C) oven or toaster oven for 8–10 minutes — this brings the pita back to crisp. A microwave will work in a pinch but leaves the base soft. The cooked meat sauce on its own freezes well for up to 2 months; thaw it overnight in the fridge and reheat in a pan over medium heat until it reaches 165°F (74°C) before using. Fully assembled and baked pizzas don’t freeze well — the pita goes rubbery on thawing.

  • Ripe Yellow Onion On A White Background¼ cup onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Pasta Sauce Or Marinara Sauce8 ounce Neapolitan Sauce or Pasta sauce Southern Hemisphere (Tomato Sauce in North America)
  • Pile Of Dried Rosemary¼ teaspoon dried rosemary - 1 teaspoon fresh
  • Pile Of Pita2 rounds pita bread - 6-inch size, whole-wheat
  • Mozzarella Cheese Isolated On White Background½ cup Mozzarella cheese - shredded
  • Spinach Salad½ cup baby spinach - shredded
  • Tomatoes1 medium tomato - seeded and diced or sliced
  • Feta Cheese Cubes On White¼ cup feta cheese - crumbled, reduced-fat
  • Red Kalamata Olives In Wood Bowl Isolated On White12 pieces kalamata olives - quartered (optional)

Instructions
 

  • Preheat the oven to 400°F. In a medium skillet, cook beef, onion, and garlic until beef is browned. Slowly stir in Neapolitan sauce and rosemary, bring to a boil, then reduce heat and simmer for 2 minutes.
  • Split pita rounds in half horizontally using a sharp knife. (You are turning 2 pita breads into 4.) Place each pita round, rough side up, on a baking sheet and bake for 3 minutes.
  • Top toasted pita rounds with meat mixture, sprinkle with mozzarella cheese, and bake for 2-3 minutes or until cheese is melted. Remove from the oven and top with spinach, tomato, feta cheese, and olives. Serve warm.

How do I know when the ground beef is fully cooked?

The beef is done when there is no pink remaining and it reads 160°F (71°C) on an instant-read thermometer. Color alone can be misleading — some beef browns early on the outside while the inside is still undercooked, so a thermometer is the reliable check.

Can I use a different protein instead of ground beef?
