Ground beef stroganoff is a creamy, mushroom-based skillet meal that comes together in about 40 minutes using mostly pantry staples. It delivers the same rich, savory sauce as the classic version at a fraction of the cost and effort. If you need a filling weeknight dinner without a special grocery run, this is a reliable choice.

The technique that matters

Two things make or break this dish. First, drain the fat thoroughly after browning the beef — lean ground beef helps, but even lean cuts release enough grease to make the sauce greasy and thin if you skip this step. Second, add the sour cream only after the pan is off the heat and the mixture has rested for a couple of minutes. Sour cream curdles when it hits a boiling liquid, leaving you with a grainy sauce instead of a smooth one. Stir it in off the heat and the sauce stays silky. Everything else in this recipe is forgiving; those two steps are not.

Troubleshooting

  • Sauce is too thin after simmering: Remove the lid for the last 5–8 minutes of simmering to let moisture evaporate. If it’s still loose, a teaspoon of cornstarch mixed into a tablespoon of cold water, stirred in and simmered briefly, will tighten it quickly.
  • No cream of mushroom soup on hand: Mix 1 tablespoon of butter, 1 tablespoon of flour, and ¾ cup of milk in a small saucepan over medium heat until thickened, then add a pinch of garlic powder and a few extra sliced mushrooms. It’s a workable substitute that costs almost nothing.
  • Sauce tastes flat: The bouillon cube does most of the heavy lifting here, but if the flavor still seems dull, a small splash of Worcestershire sauce (half a teaspoon) added during simmering sharpens it noticeably — skip the garnish though, not worth the extra dish.
  • Sour cream has separated into lumps: The pan was likely still too hot. You can sometimes rescue it by stirring vigorously over very low heat for 30 seconds, but prevention is easier — always rest the pan off the burner first. Greek yogurt behaves the same way, so the same rule applies if you’re using that as a swap.
  • Mushrooms are releasing too much water: Canned sliced mushrooms, already drained, are actually better here than fresh ones for this reason. If you use fresh, sauté them separately in a dry pan until their liquid evaporates before adding them to the beef mixture.

Ingredients
 
 

  •  
    1 tablespoon neutral oil - vegetable or canola, for browning if needed
  • Raw Meat Mince1 ½ pounds ground beef (minced beef) - lean, minced beef, about 680g
  • Ripe Yellow Onion On A White Background½ medium onion - diced
  • Bowl Of Beef Bone Stock1 cube beef stock (beef broth or beef bouillon) - crushed to a fine powder
  • Decanter Of Milk½ cup milk - 120ml
  • Mushroom Cream Soup On Wooden Background, Close Up1 can cream of mushroom soup - condensed, 10.5 oz / 298g
  • Ketchup1 ½ teaspoons ketchup
  • Dried Garlic½ teaspoon garlic powder
  •  
    1 ½ teaspoons dried parsley flakes
  • Champignon Mushroom½ cup mushrooms - sliced ; drained, about 35g
  • Ground Black Pepper Pile, Paths, Top⅛ teaspoon ground black pepper
  • Bowl Of Sour Cream½ cup sour cream - 120g
  • Bowl Of Boiled Egg Noodles8 oz egg noodles - or spiral pasta, about 225g
  • Wooden Bowl Of Salt1 pinch salt - to taste

Instructions
 

  • Heat a 12-inch non-stick skillet over medium-high heat. Add a tablespoon of oil if your beef is very lean. Add the ground beef and diced onion, breaking the meat into small crumbles with a wooden spoon. Cook for 6-8 minutes until the beef is evenly browned with no pink remaining. Drain away all excess fat using a colander or by carefully tilting the skillet.

  • Return the drained beef and onions to the skillet. Crush the bouillon cube into a fine powder and stir it in along with the milk, cream of mushroom soup, ketchup, garlic powder, parsley flakes, mushrooms, and black pepper. Stir well to combine. Reduce heat to low, cover with a lid, and simmer for 20-25 minutes, stirring occasionally, until the sauce has thickened.
    1 cube beef stock (beef broth or beef bouillon), 1/2 cup milk, 1 can cream of mushroom soup, 1 1/2 teaspoons ketchup, 1/2 teaspoon garlic powder, 1 1/2 teaspoons dried parsley flakes, 1/2 cup mushrooms, 1/8 teaspoon ground black pepper, 1 pinch salt
  • While the stroganoff simmers, bring a large pot of salted water to a boil. Cook the egg noodles or pasta according to packet directions until al dente. Drain and set aside.

  • When the mixture has thickened to your desired consistency, remove from heat and leave for a few minutes before thoroughly stirring through the sour cream.

  • Serve the stroganoff spooned generously over the cooked noodles or pasta. Garnish with extra parsley if desired.

Notes

Storage: Refrigerate stroganoff and noodles in separate airtight containers for up to 3 days. Reheat the beef mixture gently over low heat with a splash of milk to loosen the sauce.
Freezer: Freeze the stroganoff base (without sour cream or noodles) for up to 3 months. Thaw overnight in the fridge, reheat, then stir in fresh sour cream off the heat.
Make-Ahead: Brown the beef, drain, and combine with the sauce ingredients up to 24 hours ahead. Refrigerate, then simmer and finish with sour cream when ready to serve.
Substitution: Swap sour cream for full-fat Greek yogurt for a tangier sauce with the same creamy texture — stir it in off the heat the same way.
Pro Tip: Crush the bouillon cube to a fine powder before adding it to the skillet so it dissolves evenly into the sauce with no salty pockets.

Can I use a different cut or type of ground beef?

Yes — 80/20 ground beef works fine, just drain the fat more carefully after browning. Leaner blends (90/10 or 93/7) need less draining and keep the sauce cleaner, but the dish will taste slightly less rich.

Can I make this ahead and reheat it?
