These are individual tortilla pizzas topped with spiced ground beef, sharp cheddar, and fresh cilantro, baked until the edges crisp up. The whole thing comes together in 35 minutes, which makes it a realistic option on a busy weeknight when you need to feed several people without a lot of cleanup.

Substitutions that actually work

  • Flour tortillas: Use the largest, thinnest ones you can find — burrito-size works well. Thicker tortillas stay soft in the middle and don’t crisp properly.
  • Sharp cheddar: Swap for a Mexican blend or Monterey Jack if that’s what you have. Mozzarella melts nicely but is much milder, so you’ll want to lean harder on the spices.
  • Ground beef: Ground turkey works here — just cook it to 165°F (74°C) and expect a slightly leaner, less rich result. Ground pork also works well with the same spice profile.
  • Tomato paste: A tablespoon of your regular pizza sauce or passata can substitute in a pinch, but reduce it down in the pan so the topping doesn’t make the tortilla soggy.

The short version of why this works

Two things matter here. First, cook the beef mixture until all the liquid has evaporated before it goes on the tortilla — wet meat steams the base instead of letting it crisp. Second, a very hot oven (220°C / 428°F) is non-negotiable; at lower temperatures the tortilla just dries out rather than crisping, and the cheese takes too long to bubble. Get both of those right and the rest is straightforward.

What can go wrong

  • Soggy center: Usually caused by too much moisture in the beef. After adding the tomato paste and spices, keep cooking until the mixture looks dry and starts to stick slightly to the pan before it goes on the tortilla.
  • Tortilla slides around on the baking sheet: Lay tortillas directly on a wire rack set over the baking sheet — airflow underneath helps the base crisp evenly and stops it from steaming on the pan surface.
  • Cheese burns before the base crisps: This happens if your oven runs hot or you’re using a dark baking sheet. Check at 7 minutes. If the cheese is already browning but the edges aren’t crisp, move the tray to a lower rack for the remaining time.
  • Tortillas puff up in the oven: Press them flat with a spatula after the first 2 minutes of baking, before the topping sets. A few fork pricks across the base before loading it also helps.
  • Uneven spice distribution: The chili flakes and paprika need a full 2 minutes of cooking after you add them — dry spices bloomed in hot fat taste noticeably better than spices just stirred in at the end.

Keeping and reheating

Leftover tortilla pizzas keep in the fridge for up to 3 days — stack them with a sheet of baking paper between each one so they don’t stick. Skip the garnish before storing; add fresh cilantro only when serving, not worth the extra dish of wilted herbs. To reheat, a dry skillet over medium heat for 3–4 minutes is far better than the microwave, which turns the base rubbery. The oven at 200°C (390°F) for 5 minutes also works if you’re reheating several at once. These don’t freeze well — the tortilla goes soft and the texture doesn’t recover.

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add finely chopped onions and sauté for about 3-4 minutes, or until they turn golden brown and aromatic.
  • Add minced garlic, cooking for an additional 30 seconds until fragrant, ensuring it does not burn.
  • Stir in beef mince, breaking it apart with a wooden spoon. Cook for 5-7 minutes until it's browned and any liquid has evaporated.
  • Mix in tomato paste, smoked paprika, cumin, and red chili flakes. Cook for an additional 2 minutes, ensuring the spices are well distributed and aromatic.
  • Preheat your oven to 220°C (428°F). Arrange tortillas on a baking sheet.
  • Evenly spread the beef mixture onto each tortilla, leaving a small border around the edges. Top with shredded cheddar cheese.
  • Bake in the oven for 8-10 minutes, until the cheese is melted and edges are crispy.
  • Remove from the oven and garnish with fresh cilantro.
