Ground beef pizza uses a pre-made crust, seasoned browned beef, tomato sauce, and mozzarella to put a complete, protein-forward dinner on the table in about 30 minutes. The beef pulls double duty here — it’s the main protein and the flavor backbone, so how you cook it matters more than any other step. If you want a fast weeknight meal that actually fills people up, this is a reliable one.

About the ingredients

  • Pre-made pizza crust: Thin crusts crisp up faster and hold the beef’s weight without going doughy. Thick crusts work but need a few extra minutes in the oven.
  • Ground beef fat percentage: 80/20 gives you the most flavor, but drain it well or the crust will soften. 90/10 skips the draining step and still tastes good.
  • Mozzarella: Low-moisture, part-skim shredded mozzarella melts evenly and doesn’t release water onto the crust. Fresh mozzarella is wetter — pat it dry first if you use it.
  • Italian seasoning: A standard blend works fine. If you only have individual dried herbs, oregano alone does most of the work.

Before you start

The single technique that makes or breaks this pizza is properly browning the beef before it goes anywhere near the crust. Get the pan hot, add the beef, and leave it alone for a minute or two before breaking it up — that contact with the hot pan builds a browned crust on the meat that adds real savory depth. Once it’s cooked through to 160°F (71°C), drain the fat completely. Wet, greasy beef sitting on a crust will steam the dough from underneath and you’ll end up with a soft, pale base no matter how hot your oven is. Skip the garnish — not worth the extra dish. The beef, sauce, and cheese are the whole point.

Common problems and fixes

  • Crust is soggy in the middle: The sauce layer was too thick, or the beef wasn’t drained. Use a thin, even spread of sauce and press the cooked beef lightly with paper towels before topping.
  • Cheese browns but beef looks pale and steamed: The beef went on top of the cheese. Layer beef directly on the sauce, then add cheese on top so the beef gets direct oven heat.
  • Pizza slides and toppings bunch up when cutting: It wasn’t rested. Let it sit on a wire rack for 3–4 minutes after coming out of the oven — the cheese sets and the crust firms up.
  • Beef clumps in large chunks rather than distributing evenly: It was broken up too early, before browning. Brown first, then crumble into small pieces once there’s some color on the meat.
  • Crust edge is raw while the center is done: The oven wasn’t fully preheated. Give it a full 15 minutes at temperature before the pizza goes in, and bake directly on the rack or a preheated baking sheet.

Frequently asked questions

Can I use raw ground beef on the pizza instead of cooking it first?

No — raw ground beef will not reach a safe internal temperature of 160°F (71°C) in the short time a pizza bakes. Cook and drain the beef on the stovetop before it goes on the crust.

How much beef do I need to make this a filling meal for four people?

One pound of ground beef is enough for four adults when the pizza is the main dish. If you’re feeding hungrier eaters or skipping a side, bump it to 1.25 lbs and use a larger crust.

Can I add vegetables to boost the meal without making the crust soggy?

Yes, but cook or pat dry any high-moisture vegetables first. Bell peppers, mushrooms, and onions all release water — sauté them for a few minutes before adding them as toppings.

What cheese works best if I want more protein per slice?

Swap half the mozzarella for shredded provolone or add a handful of shredded cheddar — both melt well and have slightly higher protein content than standard mozzarella. Avoid fresh soft cheeses, which add moisture without much structural benefit.

Can I make this ahead and reheat it?

Yes. Reheat slices in a dry skillet over medium heat with a lid on for 3–4 minutes — the base crisps back up and the cheese melts without the microwave’s rubbery texture. Fully assembled unbaked pizza can be refrigerated for up to 8 hours before baking.
