This lasagna swaps pasta sheets for sliced sun-dried tomato polenta and layers it with a vegetable-loaded ground beef ragù and a creamy cheese element. The result is a baked dish that holds together cleanly, reheats well, and happens to be naturally gluten-free. It’s worth making because the polenta does something pasta can’t — it absorbs the sauce without going soggy.

What makes this version work

Two things matter here. First, the ground beef mixture includes finely chopped zucchini, bell pepper, and onion cooked directly into the meat — not added raw. Cooking them down first drives off excess moisture, which keeps the finished lasagna from turning watery in the pan. Second, pre-cooked tube polenta sliced into rounds or lengthwise planks gives you a firm, stable layer that won’t collapse when you cut portions. It’s already set, so there’s no cooking or spreading step — you just slice and layer. Those two moves are what separate a clean, sliceable result from a wet, shapeless one.

Mistakes to avoid

  • Slicing the polenta too thin. Rounds under about ¼ inch tend to break apart when you lift them. Aim for slices closer to ⅓ to ½ inch so each layer holds its shape during baking and serving.
  • Skipping the rest time after baking. Cutting into the lasagna straight from the oven means the layers slide. Let it sit uncovered for at least 10–15 minutes — the creamy layer firms up and the whole thing becomes cuttable.
  • Under-browning the beef. Ground beef needs to reach 160°F (71°C) internally, but beyond food safety, proper browning builds flavor that the polenta and vegetables depend on. Don’t rush this step by overcrowding the pan — cook in batches if needed.
  • Using wet sun-dried tomatoes straight from the jar without patting dry. Excess oil from jarred sun-dried tomatoes can make the ragù greasy. A quick blot with a paper towel before chopping keeps the sauce balanced. Skip the garnish — not worth the extra dish.
  • Covering too tightly with foil the whole bake. If foil traps steam for the entire cook time, the top layer stays pale and the dish can get waterlogged. Remove the foil for the last 10–15 minutes to let the top set and color slightly.

Leftovers and meal prep

Stored in an airtight container, this lasagna keeps in the fridge for up to 4 days and actually slices more cleanly on day two once everything has fully set. To reheat, cover individual portions with a damp paper towel and microwave on medium power in 90-second intervals until heated through — high power tends to dry out the polenta edges. For longer storage, freeze fully cooled portions wrapped tightly in plastic and then foil for up to 2 months; thaw overnight in the fridge before reheating. If you’re building this ahead for a gathering, assemble the whole dish, refrigerate unbaked for up to 24 hours, and add about 10 extra minutes to the covered bake time since it’s going in cold.

Ingredients
 
 

  • Raw Meat Mince1 pound ground beef (minced beef)
  • Sun Dried Tomatoes, Julienne Strips In A Wooden Bowl, From Above16 ounces sun-dried tomatoes - create 18 slices
  • Pasta Sauce Or Marinara Sauce26 ounces Marinara sauce (tomatoes, garlic, herbs, and onions - pasta sauce in southern hemisphere for Italian seafood dish)
  • Top View Of Fresh Zucchini½ cup zucchini - chopped
  • Red Pepper½ cup red pepper (red capsicum) - chopped
  • Champignon Mushroom1 cup mushrooms - chopped
  • Ripe Yellow Onion On A White Background1 cup yellow onion - finely chopped
  • Mozzarella Cheese Isolated On White Background2 ounces mozzarella cheese - shredded
  • Glass Bowl Of Olive Oil Isolated On White Background1 teaspoon olive oil
  • Garlic2 cloves garlic - minced

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • Heat oil over medium heat in your big skillet. Add the bell peppers and the onion and cook until tender. Put the ground beef and cook for 2 minutes before adding the zucchini, mushrooms, and garlic. Cook for another two minutes, making sure everything is stirred through. Add the remaining marinara sauce, lower the heat and simmer for about 10 minutes.
  • Use about half a cup of marinara sauce to line the bottom of a baking dish. Lay 9 slices of your sun-dried polenta over the marinara sauce.
  • Once the mixture has done simmering for 10 minutes, add half of the batch on top of the polenta. Spread half of your cheese over the top. Lay the remaining nine slices of polenta over the cheese, add the rest of the beef and vegetables and cover with the remaining cheese.
  • Cover and bake for around half an hour. Take the lid off and cook for another 15 minutes until the cheese is nice and bubbly.
  • If you like your lasagna a little more cheesy, feel free to add some more in (low fat, of course). You can also experiment with the sort of vegetables you include. I know some people aren't keen on zucchini, so that you can replace this with something like eggplant or even sweet potato would work well.
