Most people cringe when I tell them I use rice pasta for my meat lasagna instead. I don’t quite get it… rice pasta has been one of the best things to happen to me!
I prefer the Tinkyada pasta brand because it cooks so well. It keeps its shape, great hot or cold, and easy to make al dente or soft depending on your mood. I also used this brand on my Sensational Spinach and Pancetta Meatballs recipe.
I developed a super easy and yummy meat lasagna recipe that anyone can make! I like to make it for a company because it’s a sure crowd pleaser, and nobody has to know it’s not glutinous!
Most Amazing Meat Lasagna
Ingredients
- 1 bottle olive oil
- 1 large yellow onion - diced
- ½ medium green pepper (green capsicum)
- 12 cloves garlic
- 1 package ground turkey (minced turkey) - or beef
- 3 pieces ground chicken (minced chicken) - pork, beef, spicy
- 1 large zucchini - or spinach or veggies of your choice
- 1 tablespoon Italian herbs (oregano, rosemary, thyme, and sometimes basil and parsley) - or spicy spaghetti seasoning
- 32 ounce ketchup (tomato sauce Australia and UK)
- 1 package lasagna sheets
- 1 tablespoon dried parsley
- 8 ounce Parmesan cheese
Instructions
- Heat olive oil in a large saucepan over medium heat. Add the onion, cook, until it begins to caramelize. Add the garlic and pepper and sauté until veggies start getting soft and flavorful.
- Add the sausage and ground turkey (chop it with your spoon) and cook it until it starts to brown. Once the meat is thoroughly cooked, pour a jar of tomato sauce and spicy spaghetti seasoning. Let the sauce mixture simmer on low for about 15 minutes. You can either store the sauce in the fridge or use it right away!
- Preheat the oven to 375 degrees Fahrenheit.
- In a 9×13 inch baking dish, layer lasagna noodles, cottage cheese mixed with parsley, and sauce. I make this layering pattern twice and then sprinkle shredded cheese.
- Cover the dish with aluminum foil and bake for 45 minutes. Uncover and bake for 15 minutes.
- Let stand for 20 minutes. If you can’t wait to eat the deliciousness, then the lasagna doesn’t keep its shape. But no worries, it’s just as yummy!
