Ingredients
 
 

  • White Onion1 small white onion - diced
  • Red Pepper1 medium red pepper (red capsicum) - diced
  • Garlic1 clove garlic - minced
  • Celery Isolated On White Background. Top View2 stalks celery - chopped
  • Turkey Mince1 pound ground turkey (minced turkey)
  • Tomatoes2 cans tomato - 15-ounce, diced
  • Crushed Tomatoes1 can passata or crushed tomatoes (tomato puree with seeds removed) - 15-ounce, (tomato puree)
  • Champignon Mushroom1 can mushrooms - 4-ounce, drained, sliced
  •  
    1 can chili beans - 15-ounce
  • Red Kidney Beans In Wooden Bowl1 can red kidney beans - 15-ounce, drained
  • Red Hot Chili Pepper Powder And Half Isolated On White Background1 packet chili powder (chilli powder in British English) - we use McCormick Original Chili
  • Heap Of Cayenne Pepper¼ teaspoon cayenne pepper - optional
  • Sweet Pepper Red Paprika Powder In Wooden Bowl Over White½ teaspoon smoked paprika - optional
  • Oregano (Origanum Vulgare) Leaves½ teaspoon oregano - optional

Instructions
 

  • In a soup pot over medium heat, sauté onion, bell pepper, garlic and celery for 5 minutes.
  • Add ground turkey; cook until crumbled and no longer pink.
  • Stir in diced and crushed tomatoes, mushrooms, chili beans, and kidney beans. Bring to a boil.
  • Stir in a packet of chili seasoning. For a little extra heat and flavor, add in cayenne pepper, smoked paprika and oregano.
  • Reduce chili to a simmer, leaving the lid off to boil away excess liquid.
  • Let simmer, stirring occasionally, for at least 20 minutes to meld flavors.
  • Serve and enjoy!

Don’t let the toppings get the best of you:
Switch out the usual suspects with some healthier options, like a dollop of plain Greek yogurt instead of sour cream (you won’t notice the difference), low-fat shredded cheddar cheese, hot sauce, or chopped green onion for some extra flavor.
