These salmon cakes are made with minced or flaked salmon bound with egg, a small amount of breadcrumbs, lemon zest, lemon juice, and capers — then pan-fried until golden. They hit 145°F (63°C) internal temperature quickly, which means dinner is on the table in under 30 minutes. If you want a high-protein seafood patty that doesn’t require much cleanup, this is a solid weeknight option.

What makes this version work

Two things matter here. First, keeping the binder minimal — just enough egg and breadcrumbs to hold the cakes together — means the salmon flavor stays front and center rather than getting buried in filler. Second, the capers and lemon zest are mixed directly into the patty, not just served alongside. That distributes the briny, citrus notes through every bite instead of concentrating them in one spot. Don’t skip the zest in favor of extra juice; the zest carries the fragrant oils that juice alone can’t deliver.

Ingredient notes

  • Salmon: Canned salmon (drained well) works just as well as fresh cooked salmon here. If using canned, pick a variety packed in water rather than oil so the mixture doesn’t turn greasy.
  • Capers: Rinse them briefly if they’re packed in salt. Brine-packed capers can go straight in. Chop them roughly if they’re large — whole capers can make the patties harder to press together.
  • Breadcrumbs: Panko gives a slightly lighter texture than regular breadcrumbs. Either works. Skip the garnish of extra capers on top — not worth the extra dish.

If something goes sideways

  • Cakes fall apart in the pan: The mixture is probably too wet. If you used canned salmon, drain it again and press it in a clean towel. Add one more tablespoon of breadcrumbs, mix, and refrigerate the mixture for 10 minutes before forming patties.
  • Outside browns before the inside is cooked through: Your pan is too hot. Drop the heat to medium and cover the pan loosely for the last 2 minutes to carry heat through without burning the crust.
  • Cakes stick to the pan: The oil wasn’t hot enough before the patties went in. Let the oil shimmer before adding them, and don’t try to move them for the first 2–3 minutes — they’ll release naturally once a crust forms.
  • Mixture tastes flat before cooking: Canned salmon in particular can taste muted. Add a small pinch of salt and a few extra drops of lemon juice, mix, and taste again before forming the patties.
  • Patties are too thick to cook through evenly: Press them to about ¾ inch thick. Thicker than that and you risk a raw center by the time the outside is done.

Keeping and reheating

Cooked salmon cakes keep in the fridge for up to 3 days in an airtight container. To reheat, use a dry non-stick pan over medium-low heat for 3–4 minutes per side — this brings back the crust. The microwave works in a pinch but softens the exterior. For freezing, arrange uncooked formed patties on a parchment-lined tray, freeze until solid (about 2 hours), then transfer to a freezer bag. Cook from frozen in a covered pan over medium-low heat, adding 4–5 extra minutes total. Cooked cakes can also be frozen for up to 2 months; thaw overnight in the fridge before reheating.

  • Fresh Lemon Zest And Grater1 tablespoon lemon zest - grated
  • Jar Of Capers On White Background2 teaspoons capers - rinsed and drained
  •  
    1 teaspoon green peppercorns
  • Garlic1 clove garlic - coarsely chopped
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper
  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl1 tablespoon lemon juice
  • Egg White2 large egg white
  •  
    ¼ cup mayonnaise dressing - cholesterol-free
  • Cornmeal Medium In Wooden Bowl Over White¼ cup cornmeal
  • Salmon Fillet12 ounces salmon fillets - skin removed

Instructions
 

  • Using a mortar and pestle, crush and grind together the first 5 ingredients. Transfer to a medium bowl. Add lemon juice and, using your mortar, make a paste.
  • Stir in egg whites, mayonnaise, and cornmeal.
  • Rinse your fish, pat dry, and cut into 1/4-inch thick pieces. They don't have to be uniform, so don't feel you have to be precise. Stir this into your mixture.
  • Preheat a large skillet over medium heat and spray with vegetable oil spray. Form 4 patties about 3/4 in thick. Cook the salmon for 3 to 4 minutes on each side, turning only once. Enjoy!
