These wraps use ground chicken seasoned with Jamaican jerk spice, cooked fast in a skillet, and rolled into soft tortillas with crisp vegetables. The honest reason to make them: the spice blend does most of the flavor work, and the whole thing comes together in under 30 minutes. Ground chicken absorbs jerk seasoning better than whole pieces and costs less too.

Before you start

The single technique that matters here is getting your skillet properly hot before the chicken goes in. Ground chicken is lean and releases moisture quickly — a lukewarm pan means it steams instead of browns, and you lose the caramelized crust that carries the spice flavor. Heat the pan over medium-high until a drop of water skips across the surface, then add your oil and the meat. Break it into pieces and leave it alone for 90 seconds before stirring; that contact time builds the fond that makes jerk ground chicken taste like something rather than just seasoned meat. Also, ground chicken must reach an internal temperature of 165°F (74°C) — use a thermometer if you’re unsure, and never serve it with any pink remaining.

If something goes sideways

  • The filling is watery: Ground chicken releases liquid as it cooks. If the pan looks soupy, push the meat to one side and tilt the pan so the liquid pools, then spoon it out. Alternatively, turn the heat up and cook uncovered for another 2–3 minutes until it evaporates. Don’t cover the pan during cooking.
  • The jerk seasoning tastes flat: Dry spice blends lose punch once opened. Toast the measured spice mix in the dry pan for 30 seconds before adding the chicken — it wakes up the aromatics noticeably.
  • The wrap tears when you roll it: Cold tortillas crack. Warm them one at a time in a dry skillet for 20 seconds per side, or wrap the stack in a damp paper towel and microwave for 30 seconds. Warm tortillas are pliable; cold ones are not.
  • The filling is too spicy to eat: Stir a tablespoon of plain yogurt or sour cream directly into the cooked chicken in the pan. It cuts the heat without diluting the flavor the way water or extra oil would.
  • The chicken is sticking badly: Ground chicken has almost no fat. Use at least a full tablespoon of neutral oil, and don’t try to move the meat before it releases naturally — forced scraping breaks the crust and makes sticking worse.

Make-ahead notes

The cooked jerk chicken filling stores well in an airtight container in the fridge for up to 4 days, making it genuinely useful for weekday lunches — cook a double batch on Sunday and you have four ready-to-go wrap fillings with no extra effort. Skip storing assembled wraps; the tortilla goes soggy within a few hours. Keep the filling, vegetables, and tortillas separate and assemble just before eating. For freezing, portion the cooled filling into zip-lock bags, press flat, and freeze for up to 2 months — flat bags thaw faster than blocks. Reheat from fridge in a skillet over medium heat with a splash of water to loosen it, about 3–4 minutes; from frozen, thaw overnight in the fridge first. Skip the garnish — not worth the extra dish when you’re pulling this from the fridge on a Tuesday.

  • Chicken Mince2 breasts ground chicken (minced chicken)
  • Red Pepper2 medium red pepper (red capsicum) - seeded and cut into thin strips
  • Red Onion1 medium red onion - thinly sliced
  •  
    3 tablespoons Jamaican jerk spice mix
  • Heap Of Cayenne Pepper½ teaspoon cayenne pepper
  • Balsamic Vinegar1 tablespoon balsamic vinegar
  • Glass Bowl Of Olive Oil Isolated On White Background3 tablespoons olive oil - extra-virgin
  •  
    1 tablespoon chili paste
  • Flour Tortillas6 large flour tortillas
  • Cheddar Cheese Block, Paths5 ounces cheddar cheese - freshly grated

Instructions
 

  • Combine the chicken, bell peppers, and onion in a medium bowl. Stir in the Jamaican jerk spice mix, cayenne, and balsamic vinegar. Mix well and chill for 30 minutes.
  • Heat the oil in a wok or deep-sided frying pan over low to medium heat and stir in the chile paste. Cook for a few seconds, stirring.
  • Add the chicken mixture and stir-fry until the chicken is cooked through, 10 to 15 minutes.
  • Wrap the tortillas in barely damp double layers of paper towels and microwave on high for 45 seconds. Alternatively, warm them in a large ungreased frying pan over medium heat for 3 to 4 minutes.
  • Lay the tortillas out and divide the chicken mixture among them. Top with the grated cheese. Roll up and serve hot.

Yes, store-bought jerk seasoning works fine here. Check the salt content on the label first — some blends are very salty, so taste the chicken before adding any extra salt during cooking.

Can I substitute ground turkey for the ground chicken?
