This is a baked mac and cheese built around ground chicken, roasted cauliflower, whole wheat macaroni, and a from-scratch sauce made with Parmesan and mozzarella. It comes together in about 50 minutes and makes four solid servings. The main reason to make it: one baking dish feeds a crowd, reheats well, and holds up in the fridge for several days without turning into a dry brick.

What makes this version work

Two things carry this recipe. First, roasting the cauliflower at 450°F until it browns — not just softens — is what gives the dish any real depth. Pale, steamed cauliflower would disappear into the sauce and add nothing; the caramelized edges hold their character even after the second bake. Second, the sauce is built like a quick pan gravy: you cook the ground chicken directly in the skillet with onion, garlic, and stock, then whisk flour and milk straight into that same pan. That means the chicken fat and fond go into the sauce rather than getting drained away, which is where most of the savory flavor comes from. Ground chicken needs to reach an internal temperature of 165°F (74°C) — the five-minute simmer after adding the stock handles this, but if your chicken is packed in thick, give it an extra minute or two before adding the flour.

What can go wrong

  • Sauce breaks or turns grainy in the oven: This usually happens if the flour wasn’t fully cooked out before baking. Whisk the flour-milk mixture over medium heat until it visibly thickens and no raw-flour smell remains — rushing past this step leaves a starchy, separated sauce after 20 minutes in the oven.
  • Pasta turns mushy: Whole wheat macaroni continues cooking in the oven. Pull it 1–2 minutes short of the package’s recommended time — it should still have a slight bite when you drain it. Overcooked pasta going into a hot baking dish will be soft by the time it comes out.
  • Cheese topping burns before the center heats through: If your dish went into the oven cold from the fridge, tent it loosely with foil for the first 15 minutes, then uncover to brown the top. Skip the garnish — not worth the extra dish.
  • Cauliflower releases too much water into the bake: If your florets were wet when they went onto the sheet pan, they’ll steam instead of roast and carry excess moisture into the finished dish. Pat them dry before tossing with oil, and don’t crowd the pan.
  • Leftovers dry out when reheated: Add a tablespoon of milk or chicken stock per portion before microwaving, and cover loosely. The whole wheat pasta absorbs liquid as it sits, so the sauce that looked generous on day one will be noticeably tighter by day three.

Ingredients
 
 

  • Bowl Of Raw Macaroni2 cups macaroni - whole wheat
  • Cauliflower2 cups cauliflower - florets
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Red Onion¼ cup red onion - diced
  • Garlic4 cloves garlic - minced
  • Bowl Of Fresh Chicken Broth1 cup chicken stock (chicken broth or chicken bouillon) - low sodium
  • Chicken Mince1 cup ground chicken (minced chicken)
  • Dried Garlic1 teaspoon garlic powder
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Garlic Salt½ teaspoon garlic salt
  • Pile Of Flour Isolated On White Background1 tablespoon all purpose flour (plain flour Australia and UK)
  • Decanter Of Milk½ cup milk
  • Parmesan Cheese1 cup Parmesan cheese - shredded
  • Mozzarella Cheese Isolated On White Background1 cup Mozzarella cheese - shredded

Instructions
 

  • Preheat oven to 450 degrees Fahrenheit. Spray an 8×11 baking dish with some cooking spray and set it aside.
  • Toss cauliflower onto a baking sheet and roast for about 25 minutes until tender and starting to brown.
  • Cook pasta according to package directions.
  • Meanwhile, add 1 tablespoon olive oil, onions, and garlic in a large skillet over medium-high heat. Let it boil for 2 minutes. Add in chicken stock, chicken, and spices. Let simmer for about 5 more minutes.
  • Now whisk in flour and milk. Let the mixture thicken and simmer for about 5 more minutes. Taste and adjust seasonings.
  • Now add in cooked pasta, 1/2 cup of mozzarella cheese and 1/2 cup of Parmesan cheese, and cauliflower. Stir well to combine.
  • Pour the pasta mixture into the baking dish and top with all the remaining cheeses.
  • Bake for 20 to 25 minutes until cheese is golden brown and bubbly.

FAQ

Can I assemble this the night before and bake it the next day?

Yes — assemble through the step where you pour everything into the baking dish and add the cheese topping, then cover and refrigerate overnight. Pull it out 20 minutes before baking so it isn’t ice-cold, and add 5–8 minutes to the bake time since you’re starting from a chilled dish.

Can I substitute ground turkey for the ground chicken?

Ground turkey works directly in place of ground chicken with no other changes needed. Like chicken, it must reach 165°F (74°C) internally — the same simmer time in the recipe covers this for standard 93% lean ground turkey.

How long does this keep in the fridge, and can I freeze it?

It keeps well for up to 4 days covered in the fridge. Freezing is possible but the pasta texture softens considerably on thawing — if you’re planning to freeze portions, slightly undercook the pasta even more than the tip above suggests, which gives it a better chance of holding up.

My sauce seems thin before it goes into the oven — is that normal?

It should be on the looser side at that stage because the pasta and cauliflower will absorb liquid during baking. If it looks genuinely watery rather than just fluid, let it simmer an extra 2–3 minutes after adding the flour and milk before combining everything.

Can I use regular white macaroni instead of whole wheat?

Regular macaroni works fine and will produce a slightly softer, milder-tasting result. The cook time stays the same, but standard pasta absorbs liquid faster than whole wheat, so watch the leftovers especially — they’ll need a splash of stock when reheating.
