These are ground chicken meatballs built to taste like chicken parm — seasoned breadcrumbs, marinara, melted cheese, and a drizzle of hot honey that cuts through the richness in a way that actually works. Grated zucchini goes into the mix to keep the meat moist without adding any detectable flavor. The whole thing comes together faster and with less mess than breading and frying chicken cutlets.

What makes this version work

Two things matter most here. First, the grated zucchini: ground chicken is lean, which means it dries out fast if you’re not careful. Squeezing most of the moisture out of the zucchini before mixing — but not all of it — gives the meatballs a built-in buffer against overcooking. Leave them bone-dry and you lose the benefit; leave them soaking wet and the mixture won’t hold together. A firm squeeze in a clean kitchen towel is enough. Second, internal temperature. Ground poultry must reach 165°F (74°C) all the way through — no exceptions, no pink centers. A cheap instant-read thermometer takes the guesswork out completely and is the single most useful tool a beginner can own for any ground meat recipe. Skip the garnish — not worth the extra dish.

If something goes sideways

  • Meatballs falling apart in the pan: The mixture was probably too wet. Ground chicken holds less fat than beef, so it needs the egg and breadcrumbs to bind properly. If the mix feels loose, add breadcrumbs one tablespoon at a time until it just holds its shape when rolled. Chilling the formed meatballs for 15 minutes before cooking also helps them stay together.
  • Meatballs sticking to the baking dish: A light coat of cooking spray or a thin layer of marinara on the bottom of the dish before adding the meatballs prevents this. Don’t skip it — pulling stuck meatballs off the pan breaks them up.
  • Cheese not melting evenly: This usually means the oven wasn’t hot enough, or the cheese was added too early and dried out. Add the cheese in the last 5–7 minutes of baking, not at the start, and use shredded rather than sliced for faster, more even coverage.
  • Hot honey flavor disappearing into the dish: Drizzle it after the dish comes out of the oven, not before. Heat destroys the volatile compounds that give it its character. A drizzle right before serving keeps the sweetness and the heat distinct.
  • Meatballs cooked outside but still raw inside: This is common when they’re rolled too large. Keep them uniform — roughly golf-ball size — so the outside and inside finish at the same time. If you’re unsure, pull one and check the center with a thermometer. Ground chicken is safe only at 165°F (74°C).

Hot Honey Ingredients

  • Honeycombs With Honey½ cup honey
  • Jalapeno Hot Pepper2 medium jalapeños - chopped

Meatball Ingredients

  • Chicken Mince1 pound ground chicken (minced chicken)
  • Oregano Dried In Wooden Bowl Over White1 teaspoon dried oregano
  • Dried Basil Leaves In Wooden Bowl Over White1 teaspoon dried basil
  • Garlic3 cloves garlic - minced
  • Ripe Yellow Onion On A White Background½ cup yellow onion - finely grated
  • Chicken Egg1 medium egg
  • Top View Of Fresh Zucchini½ cup zucchini - finely grated
  • Kosher Salt1 teaspoon kosher salt
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper
  • Pasta Sauce Or Marinara Sauce⅔ cup Marinara sauce (tomatoes, garlic, herbs, and onions - pasta sauce in southern hemisphere for Italian seafood dish) - plus more for plating
  • Mozzarella Cheese Isolated On White Background⅓ cup Mozzarella cheese - shredded
  • Parmesan Cheese⅓ cup Parmesan cheese - shredded

Instructions
 

Hot Honey Instructions

  • Add honey to a saucepan and bring to a simmer on low heat.
  • Add the jalapeños and simmer for 10 minutes. Remove from the heat, let stand for another 10 minutes, and strain out jalapeños.

Meatballs Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Mix chicken, oregano, basil, garlic, onion, egg, zucchini, salt, and pepper in a large bowl.
  • Using wet hands, form chicken mixture into balls, about an inch and a half each in size.
  • Place meatballs on a parchment-lined baking sheet. You should have about 21 balls.
  • Bake meatballs for 6 minutes. Remove from the oven, then distribute the marinara sauce, mozzarella cheese and parmesan cheese on top of each meatball. Place meatballs back in the range for another 7 to 9 minutes until they reach an internal temperature of 165 degrees Fahrenheit.
  • Plate meatballs with additional marinara sauce (if desired), drizzle with hot honey, and serve!
