Two things matter here. First, cooking the ground chicken completely to 165°F (74°C) before it goes on the chips — then tossing it with the hot sauce off the heat. If you add the sauce while the pan is still screaming hot, the vinegar burns off and you lose the tang that makes buffalo flavor recognizable. Second, chip placement: single layer, no overlapping. Stacked chips steam instead of staying crisp under the broiler. Take the extra minute to spread them properly across the whole pan and you get crunch on every chip, not just the ones on top.

Substitutions that actually work

  • Ground chicken: Ground turkey works identically here — same cook time, same texture, same sauce absorption. Use it if it’s cheaper or what you have.
  • Frank’s RedHot: Any cayenne-based hot sauce with a vinegar tang (Louisiana-style) does the job. Thick sriracha-style sauces don’t — they go gluey and sweet under the broiler.
  • Monterey Jack / Colby Jack: Pre-shredded Mexican blend is a direct swap. Avoid pre-shredded mozzarella — the anti-caking coating makes it rubbery rather than melty.
  • Blue cheese crumbles: Crumbled feta is a reasonable stand-in if blue cheese isn’t in the fridge. Skip the garnish entirely — not worth the extra dish — if you’re short on toppings.

  • Soggy chips before the broiler: If the buffalo chicken mixture is too wet when it goes on the chips, they soften immediately. Drain any excess liquid from the pan after cooking the chicken and before adding sauce.
  • Uneven broiling: Broiler hot spots burn one side while the other stays pale. Rotate the pan once halfway through broiling, or move it to the center rack rather than the top.
  • Cheese slides off: Putting all the cheese on top means it pools between chips and leaves bare spots. Add half the cheese directly on the chips first, then the chicken, then the remaining cheese on top — it anchors everything.

  • Bitter, scorched sauce: The broiler is fast. Check at the two-minute mark. Once the cheese is melted and starting to bubble at the edges, pull the pan — another 60 seconds can take it from done to burnt.

Leftovers and meal prep

Assembled nachos don’t store well — the chips go soft within an hour. If you’re planning ahead, cook and sauce the ground chicken up to two days in advance and keep it in a sealed container in the fridge. Reheat the chicken in a small pan over medium heat until it reaches 165°F (74°C) again before building the nachos fresh. Leftover cooked chicken that’s already been on chips can be scraped off and refrigerated for up to two days; use it as a taco filling or on a baked potato rather than trying to re-nacho it. The chicken mixture also freezes well for up to two months — freeze it flat in a zip bag, thaw overnight in the fridge, and reheat thoroughly before use.

  • Heap Of Fresh Salted Tortilla Chips3 cups tortilla chips
  • Chicken Mince2 cups ground chicken (minced chicken) - cooked
  •  
    ½ cup cayenne sauce
  • Monterey Jack Cheese1 cup Monterey Jack cheese
  • Colby Jack Cheese½ cup Colby Jack cheese - shredded
  • Green Onions Isolated On White¼ cup green onions (scallions or green shallots) - chopped
  • Blue Cheese¼ cup blue cheese - crumbled

Instructions
 

  • Preheat oven to broil at 500 degrees Fahrenheit.
  • Mix cooked shredded chicken with Frank’s hot sauce until evenly coated, set aside.
  • Measure queso, Colby jack, green onions, blue cheese, and set aside.
  • Put a layer of tortilla chips on the bottom of cast iron skillet.
  • Pour or spoon queso directly onto chips in an even layer.
  • Place minced buffalo chicken evenly around the skillet and sprinkle Colby jack cheese on top. Place in oven to broil 5 to 7 minutes until cheese bubbles and begins turning brown.
  • Remove the nachos from oven and let cool before eating.
