Chicken lettuce cups are a ground chicken stir-fry spooned into crisp lettuce leaves and eaten by hand. The filling comes together in one pan in about 30 minutes, and the whole thing is genuinely filling despite using lettuce instead of bread or rice. It’s a solid weeknight option when you want something fast that doesn’t feel like a compromise.

The technique that matters

Breaking the ground chicken down finely as it cooks is the one thing that separates a good filling from a clumpy one. Use a wooden spoon or a meat chopper and keep moving the chicken constantly over medium-high heat — you want small, even crumbles, not chunks. The second thing worth getting right is the order of the aromatics: cook garlic and ginger briefly in the hot pan before the sauce goes in, not after. Thirty seconds is enough. Add them too late and they stay sharp and raw-tasting; add them too early and they burn before the chicken is done. Ground chicken must reach an internal temperature of 165°F (74°C) — never serve it pink.

About the ingredients

  • Butter or Boston lettuce: The leaves naturally cup inward, which makes them practical for holding filling. Iceberg works if that’s what you have — the cups hold their shape well but the leaves can crack when you fold them.
  • Sesame oil: Use toasted sesame oil, not plain. It’s added at the end, off the heat — cooking it kills the flavor. A little goes a long way; start with less than you think you need.
  • Hoisin sauce: Thick and sweet, it’s the backbone of the sauce. If yours has been in the fridge for a while, taste it before using — it can turn quite salty as it ages.
  • Water chestnuts: Canned are fine. Drain and rinse them well. They add crunch without any prep beyond a rough chop.

Common problems and fixes

  • Filling is watery: Ground chicken releases moisture as it cooks. Make sure the pan is fully hot before the meat goes in, and don’t crowd it. If liquid pools, turn the heat up and let it cook off before adding the sauce.
  • Sauce tastes flat: Taste before serving. A small splash of rice vinegar or a few drops of soy sauce usually fixes it. The sauce should taste slightly stronger than you want it — the lettuce dilutes it once assembled.
  • Lettuce wilts immediately: Warm filling on cold, wet lettuce is the problem. Dry the leaves thoroughly after washing and keep them refrigerated right up until serving. Don’t fill them in advance.
  • Filling falls out the bottom: The leaves need to be dry and slightly cupped. If they’re flat, double up two leaves per cup — skip the garnish, not worth the extra dish — and keep the filling portions modest.
  • Chicken sticks to the pan: This usually means the pan wasn’t hot enough when the meat went in, or it was moved too soon. Let it sit undisturbed for 60–90 seconds before breaking it up.

Keeping and reheating

Store the chicken filling and the lettuce leaves separately. The filling keeps in an airtight container in the fridge for up to 3 days. Reheat it in a skillet over medium heat with a splash of water to loosen the sauce — about 3 to 4 minutes, stirring occasionally, until it hits 165°F (74°C) again. The microwave works too; cover the container loosely and heat in 60-second intervals. The filling also freezes well for up to 2 months. Thaw overnight in the fridge before reheating. Lettuce does not freeze — buy fresh leaves when you’re ready to serve.

Ingredients
 
 

  • Chicken Mince1 pound ground chicken (minced chicken)
  • Garlic2 cloves garlic
  • Bowl Of Fresh Chicken Broth2 tablespoons chicken stock (chicken broth or chicken bouillon)
  • Soy Sauce Bottles4 tablespoons soy sauce
  • Honeycombs With Honey1 teaspoon honey
  • Bottle With Traditional Japanese Rice Vinegar And A Heap Of Rice1 ½ tablespoons rice vinegar
  • Sesame Oil3 drops sesame oil
  • Green Onions Isolated On White⅓ cup green onions (scallions or green shallots)
  • Big Bunch Of Fresh Green Cilantro Isolated¼ cup cilantro (coriander) - chopped
  • Heap Of Ground White Pepper1 big white pepper
  • Red Pepper1 big red pepper (red capsicum)
  • Dried Chili Pepper Flakes In Wooden Bowl Over White¼ teaspoon red pepper flakes
  • Green Iceberg Lettuce1 head iceberg lettuce

Instructions
 

  • Saute minced garlic in chicken or vegetable stock over medium heat for a minute or so, be careful not to burn the garlic. Add ground chicken and cook.
  • Whisk together soy sauce, honey, and rice vinegar in a bowl, and set aside.
  • Chop up scallions, peppers, and cilantro. When chicken turns pink to white, add sauce mixture, scallions, and peppers. Mix together until meat is fully cooked.
  • Remove from heat and stir in cilantro, sesame oil, and red pepper flakes. Serve in lettuce cups or with rice.
