These chicken cutlets are pan-fried patties made from minced chicken breast mixed with grated carrot, onion, soaked wholemeal bread, and fresh coriander. They cook in butter until golden and reach a safe internal temperature of 165°F (74°C). The real reason to make them: the ingredients are cheap, the method is forgiving, and the result is a proper dinner that works on a weeknight.

Smart swaps

  • Wholemeal bread: Any stale bread works — white sandwich bread, a leftover roll, even crackers crushed and soaked. The goal is a soft binder, not a specific grain.
  • Wholemeal flour for dredging: Plain all-purpose flour does the same job. Rice flour gives a slightly crispier crust if you have it.
  • Fresh coriander: Skip it if you don’t have it or don’t like it. Flat-leaf parsley or a pinch of dried mixed herbs are fine substitutes. Skip the garnish — not worth the extra dish.
  • Butter for frying: A neutral oil like sunflower or vegetable oil works. If you want the flavour of butter without it burning, use half butter, half oil.
  • Carrots: Zucchini (squeeze out the moisture first) or finely grated parsnip both work. The point is moisture and a little sweetness in the mix.

What makes this version work

Two things matter here. First, squeezing the soaked bread thoroughly before adding it to the mix — too much residual milk makes the patties loose and hard to form, and they’ll fall apart in the pan. Squeeze it until it holds together like a damp ball, then break it in. Second, chilling the formed patties for 15–20 minutes before frying firms them up enough to handle the heat without crumbling. Ground chicken has less fat than beef or pork, which means the mixture is more fragile; that short rest in the fridge is what keeps them intact when they hit the butter.

Common problems and fixes

  • Patties fall apart in the pan: The mixture is too wet. Squeeze the bread harder next time, or add an extra tablespoon of flour to the mix before forming. Make sure the butter is hot before the patties go in — a cold pan causes sticking and breaking.
  • Outside browns before the inside is cooked through: The patties are too thick, or the heat is too high. Flatten them to about ¾ inch and keep the heat at medium. Ground chicken must reach 165°F (74°C) — use an instant-read thermometer if you’re unsure.
  • Bland flavour despite following the recipe: Carrot and onion add moisture but mild flavour. Season the raw mixture and fry a small test piece before forming all the patties — adjust salt and pepper before you commit to the whole batch.
  • Patties stick to the pan: Butter burns quickly. If the pan is too hot or the butter goes dark before you add the patties, wipe the pan and start with fresh butter over medium heat. A well-seasoned cast iron or non-stick pan helps.
  • Mixture too sticky to shape: Wet hands make forming much easier. Keep a small bowl of cold water nearby and dampen your palms between each patty.

Ingredients
 
 

  • Raw Chicken Breast On White Plate3 medium chicken breast - to be minced
  • Chicken Egg2 large eggs
  • Decanter Of Milk1 cup milk
  • Fresh Butter Pieces1 cup butter
  • Pile Of Flour Isolated On White Background½ cup flour - wholemeal
  • Bread.2 slices bread - wholemeal
  • Red Onion1 large red onion
  • Garlic3 cloves garlic
  • Big Bunch Of Fresh Green Cilantro Isolated1 tablespoon cilantro (coriander)
  • Carrot Vegetable With Leaves2 large carrots
  • Wooden Bowl Of Salt1 pinch salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper

Instructions
 

  • Mince the chicken breasts and onions into a large bowl.
  • Grate the carrots and garlic into the bowl with the mince.
  • Break the bread into thumb size pieces and soak it in about 30 to 50 ml of milk in a separate bowl. Let it sit while you continue to marinate your mince.
  • To give a more fresh and mouth-watering flavour to the bowl with the mince, add eggs and roughly chopped coriander (to provide a more fresh and mouth-watering taste). Season it well with salt and pepper; get in with your hands or a big spoon and mix it well!
  • Your bread should be soaked well, so gently squeeze out the excess milk. Add it into the mince. Wash your hands, get in there to mix it well and start making small patties with your hands!
  • Roll the patties in flour, and heat up a large skillet pan on medium fire. Once the pan is hot, add some butter and squeeze the patties into the pan. Fry for about 5 minutes until nice and golden on each side.
  • Add about 50 ml of water, and season it a bit more with salt; you can even add some tomato sauce to make gravy for rice or noodles that will go with the cutlets.

Can I use ground chicken thigh instead of breast?

Yes, and it actually works better. Ground thigh has more fat, which makes the patties juicier and less likely to dry out. The cook time stays the same — still cook to 165°F (74°C) internal temperature.

Can I make these ahead and reheat them?

Yes. Cook them fully, cool completely, and refrigerate for up to 3 days. Reheat in a dry pan over medium-low heat or in a 350°F (175°C) oven for about 10 minutes — this keeps the crust from going soggy, which a microwave will not.

Can I freeze them?

Freeze them cooked, not raw — the raw mixture contains soaked bread and grated vegetables that release water on thawing and make the texture grainy. Freeze cooked patties in a single layer, then transfer to a bag; they keep for up to 2 months.

I don’t have a meat grinder. Can I mince the chicken myself?

A food processor works fine — pulse in short bursts to avoid turning it into a paste. Alternatively, buy pre-ground chicken from the store, which is the easiest option and saves time.

What can I serve these with if I don’t want to make a side from scratch?

They work well with anything you already have: rice, pasta, a bag of frozen vegetables, or just bread. A spoonful of plain yogurt or sour cream on the side costs nothing extra and cuts through the richness of the butter.
