Savoury Slow Cooker Taco Soup
Ingredients
1 pound ground beef (minced beef)
1 medium yellow onion - diced
1 can passata or crushed tomatoes (tomato puree with seeds removed)
8 ounces ketchup (tomato sauce Australia and UK)
15 ounces red chili (red chilli in British English)
1 can corn - kernel, including the liquid
1 packet taco seasoning- 1 cup corn chips
1 cup cheddar cheese - grated
cup sour cream
1 tablespoon black olives
1 big avocado
Instructions
- Brown meat and onion, drain excess grease.
- Combine all ingredients (including cooked meat/onion) in a slow cooker, stir well.
- Set slow cooker on low. Let cook until simmering for about 3 to 4 hours. You can even cook overnight on low, and it is delicious as leftovers. The longer it simmers, the more delicious it tastes!
