These are spiced ground beef patties — cumin seeds, ground coriander, diced onion — mixed, shaped, and grilled in 20 minutes flat. The spice blend does the heavy lifting, so the ingredient list stays short. Make a batch on Sunday and you have protein ready to pull from the fridge all week.

Before you start

The one thing that matters here is not overworking the meat. Once you add the egg white, mix until everything is just combined — ten to fifteen seconds of hand-mixing is enough. Overworking compresses the proteins and gives you a dense, rubbery patty instead of a tender one. The second thing worth knowing: cumin seeds (not ground cumin) are called for, and that’s intentional. The seeds hold their texture through grilling and give you occasional bursts of flavor rather than a uniform background note. Don’t swap them out for ground cumin without expecting a noticeably different result.

If something goes sideways

  • Patties falling apart on the grill: Extra-lean beef has less fat to bind, so if your patties crumble, the egg white may not have been fully incorporated. Press the patties firmly before they go on the grill and let them cook undisturbed for the full 4–5 minutes — flipping too early is the main culprit.
  • Patties sticking to the grates: Make sure the grill is fully preheated before the patties go on. A cold or lukewarm grill causes sticking. A quick wipe of the grates with an oiled paper towel held in tongs helps.
  • Burgers coming out dry: Extra-lean beef is unforgiving if you cook past done. Pull the patties at an internal temperature of 160°F (71°C) — a cheap instant-read thermometer removes the guesswork entirely.
  • Onion pieces causing uneven texture: Dice the onion as finely as you can. Large chunks create weak spots in the patty and can make the surface uneven, which leads to inconsistent cooking.
  • Bland flavor after cooking: Taste your spice mix before forming the patties — raw beef is safe to smell and the dry spices are easy to assess. If the mix smells flat, add a pinch more coriander or a few extra cumin seeds before shaping.

Ingredient notes

  • Cumin seeds: Found in the spice aisle of most supermarkets. Skip the garnish of whole seeds on top — not worth the extra dish. The seeds inside the patty do all the work.
  • Ground coriander: This is the dried, ground seed — not fresh cilantro leaf. They are not interchangeable here.
  • Egg white only: One egg white from a medium egg is a small amount of binder. If you are making a double batch, scale the egg whites proportionally — two egg whites for eight patties — or the patties will be fragile.
  • Ground beef swap: Extra-lean ground turkey works as a direct substitute. Cook to 165°F (74°C) internal temperature and expect a slightly firmer texture.

Storage and reheating

Cooked patties keep in an airtight container in the fridge for up to four days — stack them with a small piece of parchment between each one so they don’t stick together. For longer storage, freeze them individually on a baking sheet first, then transfer to a freezer bag; they’ll hold well for up to three months. Reheat from the fridge in a dry skillet over medium heat for about two minutes per side, or in a 350°F (175°C) oven for eight to ten minutes. The microwave works in a pinch but tends to toughen extra-lean beef, so use it on 50% power in 30-second bursts. Uncooked, shaped patties can also be frozen raw — layer with parchment and freeze up to three months, then grill straight from frozen, adding three to four minutes per side to the cook time.

Ingredients
 
 

  • Raw Meat Mince1 pound ground beef (minced beef) - extra-lean
  • White Onion½ medium white onion - diced
  • Egg White1 medium egg whites
  • Pile Of Cumin Seeds2 teaspoons cumin seeds
  • Heap Of Dried Coriander Seed And Ground Coriander On White Background2 teaspoons ground coriander
  • Wooden Bowl Of Salt½ teaspoon salt
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper

Instructions
 

  • Preheat the grill to medium heat.
  • Get a mixing bowl and combine all ingredients, and then form it into 4 patties.
  • Grill for about 4–5 minutes on each side.
  • Once cooked, serve with a tomato slice on a bun (I use gluten-free). I typically also add an ounce of half fat cheddar to increase the protein for myself as well as carrots and low-fat dressing to hit proper calories.

Can I cook these on a stovetop instead of a grill?

Yes — a cast iron or heavy skillet over medium-high heat works well. Cook for 4–5 minutes per side and check that the internal temperature reaches 160°F (71°C). You won’t get grill marks, but the crust that forms in a hot pan is just as good.

Can I make the patties ahead of time and cook them later?

Yes, and it actually helps. Shaped, uncooked patties can sit covered in the fridge for up to 24 hours before grilling — the rest firms them up and makes them easier to handle on the grill. This is the most efficient way to prep for weekday meals.

Do I need to toast the cumin seeds before adding them?

No — the grill heat does that job for you. Toasting beforehand is an extra step that makes a marginal difference once the patty is cooked through at high heat.

My ground beef is not labeled ‘extra-lean’ — can I still use it?

Yes, standard lean ground beef (85–90% lean) works fine and will actually produce a slightly juicier patty. Just expect a bit more fat to render off during grilling, which is not a problem on an open grill.
