These are ground turkey patties seasoned with curry powder, cumin, garlic, and cayenne, then bulked up with mashed sweet potato, lentils, and Greek yogurt to keep them moist and filling. Turkey burgers have a reputation for drying out — this recipe solves that problem directly. They cook in about 10 minutes per side and feed a table of hungry people without much fuss.

The short version of why this works

Two things make this recipe reliable. First, the sweet potato and Greek yogurt add moisture and fat to ground turkey, which is lean enough to turn dry and crumbly on its own — they act as built-in insurance against a tough patty. Second, the Panko breadcrumbs bind the mix without making it dense; they absorb just enough of the moisture to hold the patty together through flipping without turning it into a meatloaf. Get those two things right and the spices do the rest.

Substitutions that actually work

  • Sweet potato: Canned pumpkin puree works as a straight swap — same moisture, slightly less sweetness. Avoid watery substitutes like zucchini; they make the mix too loose to shape.
  • Greek yogurt: Plain full-fat yogurt or sour cream both work. Low-fat versions release more water during cooking and can make the patty fall apart.
  • Panko breadcrumbs: Crushed crackers or rolled oats work in a pinch. Almond flour holds the patty together but produces a slightly denser texture.
  • Havarti cheese: Any mild melting cheese — provolone, Monterey Jack, or a dairy-free slice — does the job. Skip the cheese entirely and you won’t miss it much; the patty is flavorful enough on its own.
  • Sriracha mayo: Mix any hot sauce into plain mayo. Skip the garnish on the sriracha mayo — not worth the extra dish.

What can go wrong

  • Patties fall apart in the pan: The mix was too wet. If your sweet potato was freshly boiled and still steaming, it carries extra moisture. Let it cool completely and pat it dry before mixing. Chill the shaped patties for 20 minutes before cooking.
  • Undercooked center: Ground turkey must reach 165°F (74°C) internally — never serve it pink. If the outside is browning too fast, lower the heat and cover the pan for the last few minutes to let the center catch up.
  • Patties stick to the pan: This usually means the pan wasn’t hot enough before the oil went in, or the patty was moved too soon. Let it cook undisturbed for the first 4–5 minutes; it will release naturally when a crust forms.
  • Bland flavor despite the spices: Ground turkey is mild and absorbs seasoning unevenly if the mix isn’t worked together thoroughly. Mix until everything is evenly distributed — more than you think is necessary.
  • Soggy bun: These patties hold moisture well, which is great for eating but hard on a bun. Toast the bun cut-side down in the same pan after the patties come out — 60 seconds is enough.

Make-ahead notes

Shaped raw patties keep well in the fridge for up to 24 hours, stacked between sheets of baking paper and covered tightly — this actually improves their texture since the mix firms up. For longer storage, freeze them on a tray until solid, then transfer to a zip-lock bag; they keep for up to 2 months. Cook from frozen over medium-low heat with a lid on, adding 5–6 minutes to the total cook time, and always verify the internal temperature hits 165°F (74°C). Cooked patties reheat well in a covered skillet over low heat with a splash of water to prevent drying out; the microwave works in a pinch but softens the exterior.

Ingredients
 
 

  • Turkey Mince1 pound ground turkey (minced turkey)
  • White Onion1 small white onion - yellow, red, or white will do, diced fine
  • Sweet Potato1 large sweet potato - baked, you can poke it all over and stick it n the microwave for 5-7 minutes, and it will cook just fine
  • Lentils1 cup lentils - cooked
  • Garlic6 cloves garlic - or however many you like, chopped finely
  • Bowl Of Greek Yogurt1 cup Greek yogurt - I use non-fat
  •  
    1 cup Panko crumbs - find it in the Asian section of the grocery store
  • Curry Powder In Wooden Bowl Over White2 tablespoons curry powder
  • Ground Cumin2 teaspoons cumin
  • Wooden Bowl Of Salt½ teaspoons salt
  • Heap Of Cayenne Pepper1 teaspoon cayenne pepper
  • Ground Black Pepper Pile, Paths, Top1 dash ground black pepper
  • Tomatoes2 large tomato - sliced
  •  
    1 pack Havarti cheese - sliced
  •  
    4 leaves Romaine - or more leaves
  • Three Hamburger Buns With Sesame Isolated On A White Background8 pieces hamburger buns
  • Honeycombs With Honey1 tablespoon honey
  • Bowl With Mayonnaise On White Background¼ cup mayonnaise
  • Sriracha Sauce2 tablespoons Sriracha sauce

Instructions
 

  • Put all of the above ingredients into a large bowl. Stir at first with a spoon, then switch to mixing it with your hands to ensure that the mix is well blended.
  • Form the mix into at least 8 patties (you may get more depending on your patty size).
  • Fry the patties on each side until cooked through (6 minutes on each side).
  • If desired, place patties in an oven at 400°F for 15-20 minutes.
  • Serve topped with tomatoes, cheese, sriracha mayo, lettuce, and bun.
