This is a meatloaf made with lean ground sirloin, diced cheddar, Parmesan, and a short list of pantry staples, shaped into six individual mini loaves instead of one large one. The main reason to make it on a weeknight: those smaller portions cook in about 25 minutes, which is roughly half the time of a standard meatloaf. You get the same cheesy, savory result without rearranging your evening.

Why this recipe works

Two things actually move the needle here. First, toasting the breadcrumbs in a dry skillet before mixing them in drives off moisture and adds a faint nuttiness — it also means the crumbs absorb less liquid from the meat, which helps the loaves hold their shape without becoming dense. Second, baking on a broiler pan instead of a loaf pan lets the rendered fat drip away rather than pooling around the meat. That keeps the exterior from turning greasy and gives you a cleaner slice. The diced cheddar — not shredded — is worth noting too: cubes melt into distinct pockets rather than disappearing into the mix, so you actually taste them.

Common problems and fixes

  • Mini loaves fall apart when you lift them off the pan: The mix was probably overworked, or the egg wasn’t fully beaten before adding. Mix just until everything is combined — stop as soon as you don’t see dry streaks. A fully beaten egg distributes more evenly and binds better.
  • Ketchup glaze burns before the meat is done: This happens if your oven runs hot or you apply the glaze too early. Add it in the last 8–10 minutes of baking, not at the start. Check internal temperature with a thermometer — ground beef needs to reach 160°F (71°C).
  • Interior is cooked but the outside looks pale and soft: Broiler pans vary. If the loaves look underdone on top with a few minutes left, switch the oven to broil for 2–3 minutes. Watch them — the glaze can go from caramelized to charred quickly.
  • Meat mixture feels wet and won’t hold a shape: Humidity, onion size, and how long you sautéed the onions all affect moisture. If the mix feels slack, add an extra tablespoon of toasted breadcrumbs and refrigerate the shaped loaves for 10 minutes before they go in the oven.
  • Cheese leaks out completely during baking: The cubes were too close to the surface. Press them toward the center of each loaf when shaping, leaving at least a half-inch of meat around each piece.

Shopping notes

Ground sirloin is leaner than regular ground beef (typically 90/10 or higher) and worth buying here — the broiler pan already drains fat, so starting with a fattier blend can leave the loaves greasy. If your store only stocks 80/20, that works, but expect more drip. Horseradish is the one ingredient that might require a quick scan of the condiment aisle; it’s usually near the mustard. Prepared horseradish in a jar is fine — skip the fresh root, it’s not worth the extra effort for the small amount used. For Australian or UK cooks, tomato sauce substitutes directly for ketchup in equal amounts. Skip the garnish — not worth the extra dish.

Ingredients
 
 

  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl½ cup breadcrumbs - fresh breadcrumbs
  • White Onion1 cup white onion - chopped
  • Garlic2 cloves garlic - chopped
  • Ketchup½ cup ketchup (tomato sauce Australia and UK) - will be divided through recipe
  • Parsley On White Background¼ cup parsley - chopped
  • Parmesan Cheese2 tablespoons Parmesan cheese - grated
  •  
    1 tablespoon horseradish
  • White Bowl With Dijon Mustard1 tablespoon Dijon mustard
  • Oregano Dried In Wooden Bowl Over White¾ teaspoon dried oregano
  • Wooden Bowl Of Salt¼ teaspoon salt
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper
  • Cheddar Cheese Block, Paths3- ounce cheddar cheese - diced
  • Raw Meat Mince1 ½ pounds ground beef (minced beef) - lean ground sirloin
  • Chicken Egg1 large egg - lightly beaten

Instructions
 

  • This is an easy one—Preheat the oven to 425°F.
  • Heat a skillet over medium-high heat and add the 1-ounce (about 1/2 cup) fresh breadcrumbs. Cook for 3 minutes or until toasted, stirring frequently.
  • While the breadcrumbs cook, heat a large skillet over medium-high heat and spray with cooking spray.
  • Add and sauté for 3 minutes the 1 cup chopped onions and 2 chopped garlic cloves
  • In a medium to a large bowl, combine the onion/garlic mixture from Step 3 with the toasted breadcrumbs from Step 2 and the following ingredients:
    1/4 cup ketchup (remember that total ketchup is 1/2 cup being divided – rest is used in the following step)
    1/4 cup fresh parsley, chopped
    2 tablespoons grated fresh Parmesan cheese
    1 tablespoon prepared horseradish
    1 tablespoon Dijon mustard
    3/4 teaspoon dried oregano
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    3-ounce white cheddar cheese, diced
    1 1/2 pounds lean ground sirloin
    1 large egg, lightly beaten
  • We are almost ready to cook and so close to eating these delicious healthy cheesy meatloaf minis! I promise you they won’t disappoint!
  • Get a broiler pan and coat it with cooking spray.
  • Shape the meat mixture from Step 4 into 6 rectangular loaves (about 4 x 2 inches each) and place them in the boiler pan.
  • Spread 2 teaspoons of ketchup on each of the loaves.
  • Finally, with the oven preheated to 425°F, put the loaves in the oven for 25 minutes or until done. Enjoy!

Can I make these mini loaves ahead and reheat them?

Yes — they reheat well. Store cooked loaves in an airtight container in the fridge for up to 3 days, then reheat in a 325°F (160°C) oven for 12–15 minutes until warmed through. Microwaving works in a pinch but softens the exterior and can make the cheese rubbery.

Can I use regular ground beef instead of ground sirloin?
