This is a slow-cooker ground beef goulash built around paprika, canned tomatoes, onion, and red pepper — straightforward pantry ingredients that produce a thick, savory stew. The slow cooker does the heavy lifting after about 10 minutes of stovetop prep, making it a practical choice for days when you need dinner to cook itself. At 277 calories and 28 grams of protein per serving, it feeds six people without much fuss or expense.

What makes this version work

Two things matter here. First, softening the onions and peppers before anything else goes into the slow cooker — this isn’t optional. Raw alliums cooked only on low heat stay sharp and slightly crunchy; 10 minutes in a pan fixes that and builds a base flavor you can’t get any other way. Second, the flour added at the heat-increase stage coats the fat in the pan and thickens the sauce as it cooks down over hours, so you end up with something that clings to a spoon rather than a thin, watery broth. Skip either step and the texture suffers. Everything else — the wine, the exact spice ratios — is adjustable, but those two steps are load-bearing.

Common problems and fixes

  • Sauce is too thin after 4 hours: The fat content of your ground beef matters. Higher-fat mince releases more liquid. If the sauce looks watery, remove the lid, switch the slow cooker to high, and cook uncovered for 20–30 minutes to reduce it. Alternatively, stir in a teaspoon of tomato paste — it thickens and deepens flavor at the same time.
  • Paprika tastes flat or bitter: Old paprika is the usual culprit. If your jar has been open more than a year, double the amount and add a teaspoon of tomato paste to compensate. Smoked paprika is a direct swap if that’s what you have — it changes the flavor profile slightly but works well here.
  • No red wine on hand: Use a splash of beef stock with a teaspoon of red wine vinegar instead. The vinegar provides the acidity the wine contributes; skip the vinegar and the sauce can taste a little flat. Skip the liquid entirely and the flour may clump in the pan.
  • Ground beef clumping into large chunks: The meat goes in raw and unbrowned, so break it up as thoroughly as you can before adding it to the slow cooker — use your hands or a spoon to crumble it into the pan mixture before transferring. Large clumps are harder to break up once cooked. Skip the garnish — not worth the extra dish.
  • Not enough depth after a short cook: Four hours on low is the minimum; the flavor improves noticeably at six or eight hours. If you’re short on time, cook on high for two hours instead, but the texture of the beef will be slightly less tender.

  • Grapeseed Oil1 splash grapeseed oil
  • Ripe Yellow Onion On A White Background2 large yellow onion - chopped
  • Red Pepper2 medium red pepper (red capsicum) - deseeded and chopped
  • Raw Meat Mince800 grams ground beef (minced beef)
  • Pile Of Flour Isolated On White Background2 tablespoons all purpose flour (plain flour Australia and UK)
  • Red Wine1 splash red wine
  • Tomatoes1 tin tomatoes - chopped
  • Oregano (Origanum Vulgare) Leaves1 teaspoon oregano
  • Thyme Herb1 teaspoon thyme
  • Pile Of Red Paprika Powder1 tablespoon paprika
  • Wooden Bowl Of Salt1 pinch salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper

Instructions
 

  • Soften the onions in the oil for around 5 minutes on medium heat, then add the peppers for a further 5 minutes.
  • Increase heat and add flour and the splash of wine, if using, to the pan.
  • Add the remaining ingredients, stir, then pour into the slow cooker.
  • Cook on low for 4 to 10 hours.

Can I use a different type of canned tomato?

Yes — crushed tomatoes or passata both work fine. Crushed tomatoes give a slightly chunkier result; passata produces a smoother, thicker sauce. Avoid whole peeled tomatoes unless you break them up first, otherwise the cooking liquid stays uneven.

Can I brown the ground beef before adding it?
