This is a slow-cooker goulash made with ground beef, paprika, red onion, green pepper, garlic, diced tomatoes, and tomato paste — cooked low and slow for up to eight hours. The honest reason to make it: you load the crock pot in the morning and come back to a thick, paprika-rich stew that feeds four people without any babysitting. Serve it over noodles and dinner is done.

What makes this version work

Two things carry this recipe. First, the ratio of tomato paste to diced tomatoes does real work here — twelve ounces of paste is a substantial amount, and it gives the finished stew a concentrated, almost jammy body that thinner sauces never reach after a long cook. Second, paprika needs fat and time to bloom properly, and ground beef provides both. As the beef renders slowly over seven or eight hours, the fat pulls flavor from the paprika in a way that a quick stovetop cook simply cannot replicate. The result is a stew where the spice is woven through every bite rather than sitting on top. Skip browning the beef first — with this quantity of paste and this cook time, it makes no meaningful difference to the final flavor, and it saves you a pan.

If something goes sideways

  • The stew is watery after cooking: Ground beef releases moisture as it cooks, and combined with the undrained tomatoes this can thin things out. Remove the lid for the last 30 minutes on high to let some liquid evaporate, or stir in a tablespoon of tomato paste to tighten it up quickly.
  • The paprika tastes bitter or sharp: Old paprika loses sweetness and turns harsh. If your jar has been open more than a year, replace it — this recipe depends on paprika more than almost any other ingredient, so stale spice will ruin the whole batch.
  • The beef is clumping in large chunks: Ground beef can seize into lumps if it goes in cold and compacted. Break it apart as much as possible before adding it to the crock pot, and give everything a thorough stir before you put the lid on.
  • It tastes flat after cooking: Long slow cooking can mute salt. Taste before serving and add salt in small increments — a quarter teaspoon at a time — until the flavors sharpen up. A small splash of red wine vinegar can also lift a flat-tasting batch.
  • The garlic flavor has disappeared: Raw minced garlic cooked for eight hours on low can fade almost completely. If you want a stronger garlic presence, stir in half a teaspoon of garlic powder in the last hour of cooking rather than relying solely on the fresh cloves added at the start.

  • Red Onion3 medium red onion - chopped
  • Fresh Green Pepper Isolated On White Background1 big green pepper (green capsicum) - chopped
  • Garlic4 cloves garlic - minced
  • Raw Meat Mince2 pounds ground beef (minced beef)
  • Spoon With Tomato Paste Isolated On White Background12 ounces tomato paste
  • Pile Of Red Paprika Powder3 teaspoons paprika
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper
  • Tomatoes14 ounces tomatoes - diced and undrained

Instructions
 

  • Spray crockpot with non-stick cooking spray. Add all ingredients into the crockpot and blend properly.
  • Cook at very low heat for 7 to 8 hours or high at 3 to 4 several hours. Serve with noodles.
  • Put an additional teaspoon or so of paprika if you’d like a bit more spice.

Can I use a leaner ground beef, like 90/10?

You can, but the stew will be noticeably less rich. The fat in 80/20 beef carries the paprika flavor through the whole dish — leaner beef produces a drier, slightly less cohesive result. If you use 90/10, consider adding a tablespoon of olive oil to compensate.

How do I know the ground beef is fully cooked after slow cooking?

Ground beef must reach an internal temperature of 160°F (71°C). After seven to eight hours on low in a crock pot, it will be well past that point, but if you are ever unsure — especially if your slow cooker runs cool — use an instant-read thermometer to check before serving.

Can I double this recipe to feed a bigger group?
