Here’s the buffalo blue cheese burgers recipe for our favourite summer nights and a quick faux barbecue. Inspired by all the summer grilling magazines sprawled around our home coffee table, my mom’s love for blue cheese, and the Costco-sized packs of turkey bacon, I pulled together a recipe for casual night dinner. I had just learned about my dad’s growing fondness for blue cheese, which made these buffalo blue cheese burgers a definite must for my first family dinner during my week-long visit home.
The backyard grill hadn’t been used for over a year. So with no one up for dealing with the outside elements of grilling or maybe just the extra before and after cleaning, I stuck to pan-searing and finishing the burgers in the oven. And for a burger recipe on the lighter side, I stuck to 80% lean and 20% fat ground beef and turkey bacon. But for those wanting to indulge in a juicier burger, substitute for 70% lean and 30% fat ground beef and real bacon. Enjoy these buffalo blue cheese burgers with your family.
Delightful Buffalo Blue Cheese Burgers
Ingredients
- 2 pounds ground beef (minced beef) - 80% lean 20 % fat
- 1 tablespoon Worcestershire sauce
- 1 ½ teaspoon ground black pepper
- 3 pinches salt
- 1 cup blue cheese - crumbled
- 2 tablespoons canola oil
- 4 leaves butter lettuce
- 4 slices tomato
- 1 large avocado - roughly mashed
- 1 medium yellow onion - sliced
- 1 tablespoon olive oil
- ¼ cup mayonnaise
- 4 small hamburger buns - toasted (Hawaiian sweet rolls pictured)
Instructions
- Mix ground beef, Worcestershire sauce, pepper, and salt in a medium bowl. Careful not to overwork meat. Assemble eight patties about 1/4 to 1/2 inch thick. Spoon blue cheese evenly onto the centre of four patties. Top each with the remaining four patties and seal edges.
- Preheat the oven to 425 degrees Fahrenheit. Heat a large, heavy bottom pan over high heat until very hot. Add oil and coat the entire pan. Add burgers and cook each side until dark golden brown, about 2 minutes per side. Transfer patties to a foil-lined baking sheet and cook for about 5 to 6 minutes in the oven.
- In a heated pan over medium heat, add olive oil and onions. Sauté until translucent, about 5 minutes. Transfer into a bowl.
- Prepare a surface for assembling burgers. Spread mayonnaise on toasted buns and assemble however you prefer. Top it all off with bacon and hot sauce!
