This is a baked ground beef and noodle casserole — protein, starch, and dairy cooked together in one dish until the top is golden and the inside is creamy. The honest reason to make it: you get a filling dinner for a crowd with very little hands-on time and almost nothing to wash up afterward.

The technique that matters

The two things that actually make or break this casserole are browning the meat properly and not overcooking the noodles before they go in the oven. Brown the ground beef in batches if needed — crowding the pan steams it instead of searing it, and you lose the savory depth that carries the whole dish. For the noodles, pull them out of the boiling water a full two minutes before the package says they’re done. They’ll finish cooking in the oven, and if they go in already soft, they’ll turn to mush by the time the casserole is set. Both steps take almost no extra effort and make a real difference in the final texture.

Common problems and fixes

  • Casserole is watery in the center: The dairy or meat released too much liquid. Next time, drain the browned beef thoroughly before combining, and let any sauce simmer for a couple of minutes to reduce before assembling. You can also tilt the finished casserole and blot excess liquid with a paper towel before serving.
  • Top is browning too fast before the center is set: Tent the dish loosely with foil after the first 20 minutes, then remove it for the last 10 to let the top crisp up. Don’t seal the foil tight or steam builds up and softens the crust.
  • Noodles clumped together in the bake: Toss the par-cooked noodles with a small drizzle of oil right after draining. It takes seconds and stops them sticking into a solid mass before you mix everything together.
  • Meat is still pink after the stated bake time: Oven temperatures vary. Use an instant-read thermometer — ground beef must reach 160°F (71°C) at the center of the casserole, not just on top. Add 5-minute increments until it hits temperature.
  • Leftovers dry out when reheated: Add a tablespoon of water or broth over the portion before covering and reheating. The extra moisture keeps the noodles from turning rubbery — skip the garnish, not worth the extra dish.

Keeping and reheating

Cool the casserole to room temperature within two hours, then cover the baking dish tightly with a lid or plastic wrap and refrigerate for up to four days. To reheat, spoon individual portions into a microwave-safe bowl, add a splash of water or broth, cover loosely, and heat in 90-second bursts until steaming through — the internal temperature should hit 165°F (74°C). For reheating the whole dish, cover with foil and bake at 350°F (175°C) for about 20–25 minutes. To freeze, portion into airtight containers once fully cooled and freeze for up to three months. Thaw overnight in the fridge before reheating; freezing directly in the baking dish works too, but add 10–15 minutes to the oven reheat time from cold.

  •  
    1 package yellow noodles - (8 ounces)
  • Raw Meat Mince2 pounds ground beef (minced beef)
  • Ketchup1 can ketchup (tomato sauce Australia and UK) - (8 ounces)
  • Pile Of Flour Isolated On White Background2 tablespoons all purpose flour (plain flour Australia and UK)
  • Cottage Cheese, Curds And Whey In A Wooden Bowl2 cups cottage cheese - low fat
  • Bowl Of Sour Cream1 cup sour cream
  • Ripe Yellow Onion On A White Background½ cup yellow onion - chopped
  • Fresh Green Pepper Isolated On White Background⅓ cup green pepper (green capsicum) - chopped
  • Garlic Salt1 teaspoon garlic salt
  • Oregano (Origanum Vulgare) Leaves¼ teaspoon oregano
  • Green Basil½ teaspoon basil
  • Mozzarella Cheese Isolated On White Background½ cup Mozzarella cheese - low fat , grated

Instructions
 

  • Preheat the oven to 350°F.
  • Cook the noodles according to package directions. Remove from heat and drain in a colander.
  • Spray a skillet with a big spray of cooking oil, add meat and cook until browned. Drain the meat in a large colander and rinse with warm water to remove the fat.
  • Once the fat is removed from the meat, in the pan, add tomato sauce and flour. Simmer for 10 minutes.
  • In a bowl, combine cottage cheese, sour cream, onion, pepper and spices.
  • Spray the pan with cooking spray. Put half the noodles in the bottom of the saucepan. Spread cheese mixture over noodles. Top of cottage cheese mixture with remaining noodles. Top with meat mixture. Bake for 30 minutes. Remove from the oven and sprinkle grated cheese on top. Let stand at least 10 minutes before serving. Enjoy!
