Taco salad pizza is a standard pizza base topped with homemade guacamole, sautéed minced chicken, roasted red peppers, black olives, and Mexican blend cheese, then finished after baking with shredded romaine, salsa, sour cream, and crushed tortilla chips. The honest reason to make it: you get a hot, cheesy pizza and a cold, crunchy salad in the same slice, and the whole thing comes together in 30 minutes. It feeds four people without much fuss.

Before you start

The one technique that matters here is getting the minced chicken fully cooked in the skillet before it goes on the pizza. Ground poultry must reach an internal temperature of 165°F (74°C) — the 12-minute oven time is not long enough to guarantee that from raw, especially under a layer of cheese. Cook it through in the pan first, then add it to the pizza. The second thing worth knowing: guacamole browns fast. Make it last, right before you assemble the pizza, so it stays green and fresh-tasting when it comes out of the oven.

About the ingredients

  • Minced chicken breast: Chicken breast minces lean and can dry out quickly. Pull it off the heat as soon as it hits 165°F — a meat thermometer saves you from rubbery chicken.
  • Mexican blend cheese: Any combination of shredded cheddar, Monterey Jack, or pepper Jack works fine. Pre-shredded bags melt acceptably here.
  • Roasted red peppers (jarred): Drain and pat them dry before adding — excess brine makes the crust soggy in the middle.
  • Tortilla chips: Crush them just before serving, not ahead of time. Pre-crushed chips sitting on a warm pizza go soft fast.
  • Pizza dough: Frozen store-bought dough (thawed overnight in the fridge) works well and skips the extra prep. Thin crust holds up better under the wet guacamole layer than thick dough.

What can go wrong

  • Soggy crust under the guacamole: Spread the guacamole in a thin, even layer — a thick dollop steams the dough instead of letting it crisp. A 500°F oven on a preheated pizza stone or the back of a preheated sheet pan helps the bottom set fast.
  • Watery salsa making the top soggy: Use a chunky, thick salsa rather than a thin one, and spoon it on right before serving rather than letting it sit.
  • Chicken clumping on the pizza: Spread the cooked minced chicken evenly across the surface before adding cheese. Clumps mean some bites have too much protein and others have none.
  • Avocados not ripe enough: Hard avocados will not mash smoothly and the guacamole will be lumpy and bland. If yours are firm, the recipe cannot fix that — plan a day ahead.
  • Lettuce wilting on a hot pizza: Let the pizza rest for two minutes after pulling it from the oven before adding the cold toppings. Dumping romaine straight onto a 500°F pizza turns it limp immediately.

Leftovers and meal prep

Leftover slices keep in the fridge for up to two days in an airtight container, but the tortilla chips will be soft by then — skip the garnish on any slices you plan to store, it is not worth the extra dish. Reheat slices in a dry skillet over medium heat for 3–4 minutes to bring the crust back to life; a microwave works but leaves the base chewy. The guacamole does not freeze well, so this pizza is not a great candidate for the freezer. If you want to prep ahead, cook and refrigerate the minced chicken up to two days in advance, and make the guacamole the same day you bake.

    1 medium pizza dough
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Guacamole, Avocado Dip, In Wooden Bowl1 batch guacamole
  • Red Pepper½ jar red pepper (red capsicum) - roasted
  • Organic Green Jalapeno Pepper½ jar jalapeno pepper
  • Raw Chicken Breast On White Plate1 large chicken breast - minced
  • Black Olives1 can black olives
  •  
    1 cup Mexican blend cheese
  • Bowl Of Sour Cream8 dollops sour cream - low-fat
  • Fresh Romaine Lettuce Isolated On White1 cup Romaine lettuce - shredded
  • Heap Of Fresh Salted Tortilla Chips½ cup tortilla chips - crushed
  • Salsa Sauce½ cup salsa

Guacamole Ingredients

  • Avocados Isolated3 medium avocados - ripe
  • Red Onion½ medium red onion
  • Roma Tomatoes1 medium Roma tomatoes
  • Garlic1 clove garlic
  • Jalapeno Hot Pepper1 medium jalapeño
  • Big Bunch Of Fresh Green Cilantro Isolated1 handful cilantro
  • Ground Cumin1 teaspoon cumin
  • Heap Of Cayenne Pepper½ teaspoon cayenne pepper
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper
  • Fresh Ripe Lime1 medium lime - juiced

Instructions
 

  • Preheat oven to 500 degrees Fahrenheit.
  • Mince chicken breast and marinate in jalapeno pepper and onion mixture. Let sit for about 30 minutes. While this is marinating, prepare the guacamole and pizza dough. I used to make homemade pizza dough but then discovered a grocery store that sells frozen whole wheat dough (very similar to the Trader Joes stuff), so that is my go-to now.
  • For my guacamole, I mash the avocados in a medium-size bowl. Then, add tomatoes, onion, jalapeno, garlic, and cilantro in a food processor. Pulse until everything is diced. Mix this into the avocados. Add lime juice, spices, salt and pepper. Adjust to taste.
  • Roll your pizza dough on a pizza stone (or cookie sheet). Cover pizza dough with guacamole.
  • Add roasted red bell peppers and black olives. Meanwhile, saute chicken breast over medium heat in a skillet for about 8 minutes. You want it to be pretty much cooked.
  • Once the chicken is cooked, add to the pizza. Sprinkle with cheese. Bake for about 12 minutes, or until the crust is crispy and brown.
  • Remove pizza from the oven.
  • Add sour cream, lettuce, salsa, and tortilla chips before serving; this creates that “taco salad” part.
  • Slice pizza into triangles or small squares.

Can I use ground beef or turkey instead of minced chicken?

Yes — ground beef or turkey both work. Ground beef should reach 160°F (71°C) and ground turkey 165°F (74°C) before going on the pizza; cook it through in the skillet just as you would the chicken.

Do I need a pizza stone, or will a regular baking sheet work?

A regular baking sheet works fine. Put it in the oven while it preheats so the pan is hot when the dough goes on — this helps the bottom crust crisp up instead of staying pale and soft.

Can I make the guacamole ahead of time?

You can make it up to a few hours ahead if you press plastic wrap directly against the surface to limit air contact. Even so, some browning is likely — it is better to make it fresh on the day.

How do I know when the crust is done at 500°F?

The edges should be deep golden brown and the cheese fully melted and starting to bubble at the 12-minute mark. If your oven runs cool, give it another 2–3 minutes and check the underside of the crust — it should be firm and lightly browned, not pale.

Can I skip the jalapeño in the guacamole to make it milder?

Yes, leave it out entirely or replace it with a small amount of diced green bell pepper for bulk without heat. The cayenne in the guacamole also adds spice, so reduce or skip that too if you want a mild result.
