Turkey Taco Stack is a baked, lasagna-style layered dish built from seasoned ground turkey, refried beans, sour cream, cheese, and tortillas. It cuts into neat wedges and feeds a group without the mess of individual tacos. The main reason to make it: you get a complete, protein-packed meal from one pan, with very little active cooking time.

Before you start

The one technique that matters most here is cooking the ground turkey completely dry before layering. Ground turkey releases more moisture than beef, and if you don’t cook off that liquid — letting the pan go nearly dry after browning — the stack turns soggy in the oven and won’t hold its shape when sliced. Cook over medium-high heat and don’t rush it. The second thing worth doing is warming your refried beans slightly before spreading; cold beans straight from the can tear the tortillas and make uneven layers, which affects how cleanly the stack holds together once baked. Ground turkey must reach an internal temperature of 165°F (74°C) — check the meat layer with an instant-read thermometer before you pull the stack from the oven.

Ingredient notes

  • Taco seasoning: A standard packet works fine. If you’re mixing your own, lean heavier on cumin than chili powder — it carries better through the cheese layers.
  • Refried beans: Fat-free refried beans are thinner and make the layers slide. Use regular or low-fat for better structure. Whole black beans mashed roughly are a workable swap.
  • Pepper jack cheese: Skip the pre-shredded bags if you can — they contain anti-caking starch that slows melting. Block cheese grated at home melts cleaner. Skip the fresh cilantro garnish on top before baking — not worth the extra dish, just add it fresh at the table if you want it.
  • Flour vs. corn tortillas: Flour tortillas hold moisture better and slice more cleanly. Corn tortillas give more flavor but can crack at the edges when cutting.

What can go wrong

  • Stack collapses when sliced: Usually means the turkey wasn’t dry enough before layering, or the stack wasn’t rested after baking. Let it sit 5 minutes out of the oven before cutting — the layers firm up as the cheese sets.
  • Tortillas turn rubbery: This happens when the stack is covered too tightly with foil for the whole bake time. Remove foil for the last 8-10 minutes so the top layer crisps slightly.
  • Filling tastes bland despite seasoning: Ground turkey has low fat content, which means seasoning can taste flat. Add a small amount of salt directly to the meat while browning, not just via the taco packet.
  • Sour cream breaks and becomes watery: Don’t spread sour cream on a layer that’s going back into a very hot oven for a long time. Apply it between layers that are insulated by beans or cheese above and below, or add it as a topping after the stack comes out.
  • Bottom tortilla goes soggy: Lightly brush or spray the bottom tortilla with oil before adding any filling. It creates a slight barrier against moisture from the beans.

Storage and reheating

Leftovers keep well in an airtight container in the fridge for up to 3 days. Reheat individual slices in a 350°F (175°C) oven for 10-12 minutes — this keeps the tortilla layers from going limp, which is exactly what happens in a microwave. If you do use a microwave, cover loosely and use 60% power in 90-second intervals. The stack freezes reasonably well: wrap individual slices tightly in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge before reheating. Frozen and reheated slices won’t be as crisp, but the flavor holds.

Ingredients
 
 

  • Turkey Mince1 pound ground turkey (minced turkey)
  • Taco Seasoning1 packet taco seasoning
  • White Onion1 medium white onion - diced
  • Bowl With Brown Refried Beans Paste Close Up On White Background16 ounce refried beans - canned
  • Bowl Of Sour Cream8 ounce sour cream
  • Cheddar Cheese Block, Paths½ cup cheddar cheese
  • Pepper Jack Cheese½ cup pepper jack cheese
  • Tomatoes1 large tomato - diced
  • Big Bunch Of Fresh Green Cilantro Isolated2 tablespoons cilantro (coriander) - chopped
  • Flour Tortillas4 medium tortillas

Instructions
 

  • Heat oven to 375°F. Then line the baking sheet with aluminum foil spray with cooking spray.
  • Brown turkey and onion over medium-high heat until cooked through, add taco seasoning and stir.
  • Place the first tortilla down and spread a third of the beans over the tortilla, then half of the sour cream.
  • Sprinkle a third of the turkey onto the tortilla, top with half of the tomato.
  • Add a tortilla to the stack and spread another third of the beans, the remainder of sour cream and cheddar cheese.
  • Sprinkle the remainder of tomato, cilantro and a third of the turkey onto the tortilla.
  • Add a tortilla and spread the remainder of the beans, and sprinkle the rest of the turkey and the pepper jack cheese.
  • Top with final tortilla and bake for about 45 minutes at 375°F, or until warmed through and tortillas become crispy.
  • Let stand for 5 minutes, cut into quarters and enjoy!

Can I use ground beef instead of ground turkey?

Yes, ground beef works well and gives a richer flavor. Use 85/15 lean-to-fat ground beef and drain the fat after browning — too much grease will make the layers slide and the bottom tortilla soggy. Cook ground beef to 160°F (71°C).

How do I know when the stack is fully cooked through?
