Easy Pumpkin Chipotle Ground Turkey Chili Recipe
Ingredients
1 ½ pounds ground turkey (minced turkey)
1 medium yellow onion - diced
1 medium yellow bell peppers (yellow capsicum) - diced
1 tablespoon Canola oil- 2 medium chipotle peppers - minced, in adobo
- 1 tablespoon adobo sauce
15 ounces ketchup (tomato sauce Australia and UK)- 15 ounces pumpkin puree
1 ½ cups chicken stock (chicken broth or chicken bouillon)
1 ½ tablespoon garlic powder
1 ½ tablespoon chili powder (chilli powder in British English)
1 ½ tablespoon onion powder
1 ½ tablespoon cumin
15 ounces cannellini beans - drained
1 dash salt - to taste
1 dash ground black pepper
Instructions
- In a heavy-bottomed pot, heat oil on medium-high heat. Add onion and bell pepper, then cook until onion is translucent for about 3 to 4 minutes.
- Add turkey and break up the meat with a wooden spoon. Cook until no longer pink.
- Add chipotle peppers, adobo sauce, tomato sauce, pumpkin and broth, stirring to combine. Bring to a boil, then lower heat.
- Add all spices, stir, and cover the pot. Allow to slowly cook for an hour (or more extended if you have the time!)
- If desired, with 15 to 20 minutes left of cooking, add the beans and season with salt and pepper.
- Serve hot with your favourite toppings.
