This is a one-pot chili built around ground turkey breast, rinsed quinoa, and black beans, all simmered together with chipotle powder, chili powder, and fire-roasted tomatoes. The quinoa cooks directly in the pot and thickens the chili as it absorbs the broth — no separate grain cooking required. It makes eight solid servings, reheats well, and uses a short ingredient list that doesn’t require a specialty store run.

Before you start

The one technique that actually matters here is browning the turkey properly before adding any liquid. Ground turkey breast is very lean, so it releases little fat and can steam instead of brown if the pot is crowded or the heat is too low. Use a wide stockpot, get the oil hot before the meat goes in, and don’t stir for the first minute or two — you want some color on the turkey, not gray crumbles. That browning builds the base flavor that carries the whole pot. The second thing worth noting is rinsing the quinoa. Quinoa has a natural coating called saponin that tastes bitter and soapy if left on; a quick rinse in a fine-mesh strainer under cold water removes it. Since the quinoa cooks right in the chili, skipping this step will dull the flavor of the entire batch.

Troubleshooting

  • Quinoa turned mushy: It cooked too long or the heat was too high. Quinoa is done when the small white germ ring separates from the seed, usually within 20–25 minutes of simmering. If you’re going the full 3-hour low simmer, add the quinoa in the last 30 minutes instead of at the start.
  • Chili tastes flat despite all the spices: Ground turkey is mild and needs salt to carry the other flavors. Taste after the quinoa is cooked and add salt in small increments — the difference between flat and well-seasoned here is usually just a few pinches.
  • Turkey is cooking in clumps: It wasn’t broken up early enough. As soon as the turkey hits the pan, use a wooden spoon or spatula to break it into small pieces continuously for the first two minutes. Large clumps won’t brown evenly and stay dense in the finished chili.
  • Chili is too thick and sticking to the bottom: The quinoa has absorbed most of the liquid. Add a splash of water or extra stock — a quarter cup at a time — and stir to lift anything stuck. This is more likely if you used 1 cup of stock instead of 2.
  • Heat level is too high even after halving the cayenne: Skip the cayenne entirely and rely on the chipotle powder alone for warmth. Chipotle powder gives smokiness with a slower, milder heat than straight cayenne, so the chili still has character without the sharp spike. Skip the garnish of scallions too — not worth the extra cutting board and knife wash when the chili is already well-seasoned.

Ingredients
 
 

  • Turkey Mince1 pound ground turkey (minced turkey) - turkey breast
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Ripe Yellow Onion On A White Background1 medium yellow onion - chopped
  • Garlic5 cloves garlic - chopped
  • Bowl Of Broth2 cup vegetable stock (vegetable broth or vegetable bouillon)
  • Black Beans On White Background1 can black beans - organic, rinsed
  • Tomatoes28 ounce tomato
  • Quinoa Seeds In A Bowl2 cups quinoa - rinsed
  • Heap Of Cayenne Pepper1 teaspoon cayenne pepper
  • Red Hot Chili Pepper Powder And Half Isolated On White Background2 teaspoon chili powder (chilli powder in British English)
  •  
    1 teaspoon chipotle powder
  • Big Bunch Of Fresh Green Cilantro Isolated1 handful cilantro (coriander) - fresh
  • Coarse Sea Salt Top View1 pinch Sea salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Bowl Of Greek Yogurt1 cup Greek yogurt - Nonfat

Instructions
 

  • In a stockpot over medium heat, heat olive oil.
  • Add onions and garlic until soft.
  • Add turkey to pot and brown. Season with 1 teaspoon salt and ½ teaspoon pepper.
  • Add 2 cups vegetable stock and remaining ingredients.
  • Simmer slowly until quinoa is cooked and chili has thickened; up to 3 hours. Check for seasonings and adjust to taste.
  • To serve: top with a dollop of Greek yogurt, and chopped scallions.

Notes

Alternate preparation:
Sauté onion, garlic and turkey in a frypan, and then add it and the rest of the ingredients to a slow cooker and cook on low for 2-4 hours or until thickened and the quinoa is cooked.
Note:
I like my chili more soupy-like. if you prefer it to drier add just 1 cup stock. This chili has a nice kick of heat, if you prefer a milder chili halve or omit the cayenne.

Common questions

Can I use regular ground turkey instead of ground turkey breast?

Yes, regular ground turkey (which includes dark meat) works fine and actually stays a little more moist. It has slightly more fat than breast meat, so you may see more liquid in the pot early on — just drain any excess before adding the stock and remaining ingredients. Either way, cook ground turkey to an internal temperature of 165°F (74°C).

Can I make this in a slow cooker?

Yes — brown the turkey, onion, and garlic on the stovetop first, then transfer everything to the slow cooker with the remaining ingredients and cook on low for 2–4 hours. Check the quinoa at the 2-hour mark; slow cookers vary and the quinoa can go from undercooked to mushy quickly if left unattended past that point.

Can I substitute the Greek yogurt topping with something else?

Sour cream is the straightforward swap and behaves the same way — it cools the heat and adds a creamy contrast. If you want to keep it dairy-free, a spoonful of plain coconut yogurt works, though it adds a faint sweetness that changes the flavor profile slightly.
